Srilankan Malaysian Beef chuka which is pronounced chooka or shooka is a popular beef dish amongst the Srilankan Malay community. its often cooked at malay homes than beef curry. This is our go to beef dish for everything from rice to noodles and even bread. Mainly because it takes less ingredients than a curry but its also very very tasty, it gives out a tangy and pepper spice kick. Its often mistaken as the BISSTEAK (beef steak) dish which is also another popular beef recipe in Sri Lanka because of the pepper taste but let me assure you these are two different recipes altogether and tastes completely different too.
The ingredients for the BEEF CHUKKA is as below:
•800 grms of veal or soft tender beef
•3Large Bombay Onions finely sliced into rings.
•3Large pods of garlic sliced.
•1 inch ginger sliced.
•2 large pandan leaves (tied into nots of 1inch each)
•1Large stick of ceylon cinnamon.
•1 table spoon of crushed black pepper.
•Half a coffee cup of coconut vinegar.
•2 or 3 table spoons of clarified ghee.
•Salt to taste.

I’m a Sri Lankan Malay who lives in the states for years. I really miss eating our food. Like you, I grew up eating traditional Malay dishes. Nene used to cook whole day :(( I really really miss eating them. Thank you so much for these lovely videos... Pls do Sri Lankan Malay style beef satay video..

Didn’t know “chukka” (as my grandmother calls it) was Malay in origin until today. My grandmother makes it all the time when she wants to make beef with low effort. It’s delicious and soft because of the slow cooking❤️

Found your channel through the Food Ranger. I'm a grad student from Philadelphia and almost always cook lankan curries according to Ape Amma. It sucks sometimes because she doesn't do any red meat dishes and meat here is cheaper than veggies. Hope to learn some of the beef dishes I saw at your grandma's home on your channel!

My mom used to make daagin Chooka with pieces of about 1kg and slow cook it for 3-4hrs, that was out of this world, mom also added inguru piyal and a bit of turmeric I think and full pepper cones

My mum adds round slices of potatoes halfway through the cooking. It just mets in the mouth. Even white ghee rice to make it bit of richer. Yu. Yum

Yes... My grandmother also puts potatoes and onions at the very end for special occasions.. like you said.. it's really nice with ghee rice or even yellow rice. We even eat this with Sri Lankan noodles.

Cuka means vinegar in bahasa melayu/Indonesia. Yeah I guess vinegar is the main ingredient on this beef recipe. Anyone knows the version name in modern day Indonesia/Malaysia?

Really good detailed explanation on recipe including difference to bistek or beefsteak. Philippines has beefsteak, as does Malaysia & Indonesia and the Marianas (Guam) has bistek. Interesting to know know Sri Lanka does too. Do you know the origin of the dish? I've always been curious about the origins of food styles. I suspect bistek and perhaps this one as well are of Portuguese or Spanish origin, but adapted with regional ingredients like ginger, pandan, curry leaves, cinnamon, cardamom, coconut milk, etc. Perhaps you can do a beefsteak-bistek recipe in the future and explain the origin research you discover? I would be so grateful! Btw, no other food channel gives such good details on food style differences and tips as you did here. If you can add the origins and its travel routes, you would connect us globally. That's a winning combination in my book! Bravo and best wishes. Sri Lanka has a huge diversity in food as a result of the diverse number of communities living in the country. You are right in that the dishes you have mentioned are of Portuguese origin. A significant amount of Sri Lankan cooking techniques (particularly including garlic, vinegar, and oil sautéing) originate in Portuguese influence and mixing in the country. In fact the word for vinegar "Vinaa-kiri" is of Portuguese origin, the Portuguese word being "Vinagre". Many Sri Lankan baked goods also trace their history to Portuguese foods and often bear Portuguese names "Pan" for bread, Love Cake, Christmas Cake,and Fugete amongst others. The Portuguese also introduced chillies, tomato, potatoes, avocados, cashew, and other crops to Sri Lanka following what is known as the "Columbian Exchange". You may find more information about this in the thesis: "Culinary History of the Portuguese Eurasians" by Janet P. Boileau. As Portugal was part of the Iberian peninsula, I feel like Sri Lanka and Philippines has a lot of similar dishes, particularly those cooked during Christmas season. Sri Lanka also has a fascinating and ancient indigenous culture of the Wanniyala Aetto (often called Vedda) which I recommend learning about. The RU-vid Channel "Vedi Rata" is a great resources for learning about the indigenous Sri Lankan community. I myself am learning this community's language these days. Lankan Malay cuisine is also fascinating and diverse Ruzaina does some amazing work preserving these historic dishes. In addition to food, the Malay community has contributed vast amounts of culture, art, music to Sri Lanka. Thanks for preserving these cultural artefacts Ruzaina. Perhaps you are not aware that Sri Lankan Malays came to Ceylon with the Dutch from the Dutch East Indies, which is today's Indonesia. You refer to yourself as a Sri Lankan "Malaysian". Malaysia is a relatively modern political entity which came into being in 1963, after Malaya (an ex-British territory) federated with the British Crown Colonies of Singapore, Sarawak and North Borneo (Singapore was expelled from the federation in 1965). So yes, I will acknowledge you as a Malay (Melayu) heritage Sri Lankan, but not as a Malaysian. PS: I love your foodie posts- keep them coming please!

malay people is not means you are from malaysia only, but according the history, some of malay pepple in srilanka came from indonesia since portugues colonialism era and duch colonialism era many of them was member of troops or millitary member who bring by colonial goverment , and another of them was political person and members of nobel person ( suthanate family member who uncoperatif ) to colonialize goverment as an political exile so if you indentyfied your self as a malay people, its not only dessendent of malaysian peninsula, but you are also dessendent of indonesian archipelago, event malaysia was part of indonesia before colonialsm era

Unfortunately there is no substitute for Pandan (rampe) flavour. But you can opt out of it and not add it.

Hi shenaz.. you can pressure cook the beef but first cook it according to the recipe and add a little Extra water and then pressure cook it on low fire. If not the taste will not be there although the meat will be soft.
