You just have to steam the wattilappam just as she showed you. While steaming, the wattilappam mixture rises to the top just as cakes rise while baking. Once the steaming process is over, the risen wattilappam falls back to it's original position. Then sometimes the top becomes uneven as is seen in this video. You don't have to do anything to get it. It usually takes half an hour. After half an hour stick a knife in to the centre of the wattilappam. If the knife comes out clean, then it's done. If not, leave it for another 5 minutes to steam
