Gain on guitar amps basically means the amount of grit/distortion - that 'electric' sound is a normal guitar signal being distorted to hell. Your amp might not be able to go that far if it's more of a regular bluesy amp, but you can get a distortion pedal to make it sound more rock/metal. And I just realised you're talking about the knobs on your actual guitar - it's the amp controls or any pedals that change the sound. The volume knob softens it and the tone one rolls off the brighter edge
