Ever wondered if you could bake fresh biscuits, muffins or even a brownie in the backcountry on a backpacking trip? This video is meant to show you how to steam bake using a backpacking stove, and a double layer cook kit system. When I've tried steam baking everything comes out too soft for me. I like using a backpacker oven over my Frybake so I can bake and get nice browning on all sides. You have to use a stove with a remote mounted fuel source like a whisperlite or any remote canister stove though. I think the doughy top you get is because there's no heat at all, not even the steam, hitting the top of the inner cooking vessel. You'd need an inner container that fits entirely within the larger outer pot so the steam fully surrounds it on all sides.

William Kapes totally on the same page. I guess this at least shows you can do it with minimal stuff and get by with a good biscuit even if it is a little doughy on top. 😂 those other tools/gear would just make it that much better.

Yes, I agree. It is like in this method you are not actually creating an oven. Therefore, the full items is not cooking. Bigger pot so you can lock heat in like an oven. Then you use a smaller cup. I suspend a collapsible silicone cup.

Why not use a piece of aluminium foil as a lid to trap the moisture coming from your dough to completely cook the top? Your losing all the heat from that black plastic lid.

the top would fully cook if you had the inner container being fully enclosed in the outer container. The heat essentially is making it to the top last, but if it were fully contained, the steam would be in contact with the top and bake it perfect

as others have stated this isn't true steam baking, it's more like bain marie/double boiler cooking which is why the top didn't fully cook.

I'll double down on the comment that the reason for your doughy top is that your inner container isn't totally inside the steam chamber. I just started to experiment with steam baking... I tried a "Bisquik Complete" mix... didn't have to grease the inside of my inner cup, but my inner cup fit totally inside the outer cup and so the steam was on all sides of the inner cup and my top was NOT doughy.

Despite not being able to get a nice crust with steam baking, and a doughy top, I'm sure if you were on the trail, it would still be a tasty treat. I've been using the Flat Cat Gear Snow Leopard Backpacking Oven 2.0 with the Esbit/Epicurean Stove with pretty good results. I like your Fry Bake videos, I think I'm going to have to pull the trigger and pick one up, they are so versatile.

Venture Outside yeah the frybake will get more use for baking than this will, but it’s been a blast to play with this system for baking. Get the Frybake Alpine Deep. It’s the best!

Why not just take aluminum foil and direct cook over the open flame. Leave room for it to rise and you have an improvised oven in the back woods. Less steps and would work with cakes, biscuits, Steaks, or full meals in a sealed cooking bag wrapped in foil. Also ref. to as Manifold cooking on jetski or snow machine. Heat source is all you need. Same principal works as well.

lol bro, a little too much water in the dough and a little too much water boiling. adjust water a few times and you will get the right amount. You have great info on camping stove. good channel

Love this vid! If I use a cup that's shorter than my main cooking pot it saves most of the water too (420ml nests well in my 750ml). Sometimes I also break an egg on top and steam it for the last 5 minutes of the biscuit. And country gravy mix plus the remaining water from the steam process makes top notch trail biscuits and gravy.

I think after it's cooked you could put the inner cup on the flame for a minute or 2 to get it a bit crispy

Doughy top = not totally cooked. Lol.i know I've been there. Oh the better one is where the bacon grease and biscuit dough pdrementslly discolored the SS pot when baking biscuits.

A most timely video Devin! I am going to try something similar in the fry bake using a muffin mix, foil muffin paper and water. Will also employ the "tower of power" (elevate the fry bake via a windscreen) like they show on NOLS.

Thanks, but I'll stick with my Frybake pan. Especially here in the southeast where you can always have a fire and use it like a Dutch oven.

I tried dry baking and had amazing results...with no doughie top! ...I think it's my new hobby for me now haha..but this video is what got me thinking ...I'm gonna try steaming sometime soon...great stuff
