Now, those are some blue-ribbon-at-the-county-fair peas! As a survivor of childhood canned grey lumps that were labeled "Peas," these are indeed a blessing. Btw, to me OCD stands for "OCcupied with Details." Your videos are jam-packed with important details that can make the difference between success and Oh Crap! What went wrong?! Many thanks for sharing your wisdom and experience.

Danny has solved my great mystery. When I opened my canned English peas from last year they were so bitter I couldn't eat them. Thank goodness I only canned a few jars. If I remember correctly I would pick them in the afternoon, shell them at night and put in the fridge to can the next day. I didn't know they would loose their sweetness shortly after being shelled. I will definitely do different next time. Mystery solved, thanks Danny, you and Wanda always include great little nuggets of info. In your videos. Also never knew that pulling the weeds out next to the root would disturb the plant roots, thanks again, I am learning so many useful tips to use here on our homestead. Have a good day and Happy Homesteading !

New subscriber here, not posted before but had to this time. Big smile when I saw title of English peas. These were just called peas when I was growing up in Missouri and not until I moved to Texas years ago did I learn they were “English”peas. So many roadside stands advertising peas I pulled into before learning peas were purple hull and others I called beans before I finally asked. Yep, y’all are truly southerners. Thank you for the delightful memory. Hope you continue your great vids as I work through all your old ones.

New Sub for a couple reasons: Thank you for the information you provided about the pea plant root system. I learned something today! No need to sterilize the jars when pressure canning; the temp inside the canner gets so hot that it sterilizes the jars and kills whatever bacterial entities that may be lurking. But please, rinse the jars before putting food in it to flush out any dust/debris inside! Water bath canned stuff NEED to have the jars sterilized before using the jars as the WB canning process doesn’t get hot enough to do it.

@lottiefaith6935

I really like seeing the process, it's a lot of work to get a jar of peas and it's good to see that. I am very new to this and trying to learn before I start trying to grow and can so please forgive me if I ask too many questions. You were tapping the lids to show they were all sealed properly, what would it have looked/sounded like if there wasn't a proper seal? It took forty minutes to preserve them but will they cook quickly when you're eating them fresh? Thanks for teaching us.
@DeepSouthHomestead
@DeepSouthHomestead 8 лет назад
+Lottie Faith The top will sound hollow if the suction hasn't taken place. Most veggies that take the least amount of time to cook when fresh seem to take longer to can. Corn is a good example. You can cook it in just a few minutes but canning takes nearly an hour. Ask anytime. We don't mind. That is why we are showing these things. We are not experts, just a couple who have been doing this a long time. Thanks

@FarmFreshIB
@FarmFreshIB 8 лет назад
I usually wait until the next day and then I label my jars and remove the outer rings. Doing this will allow you to check if the seal is good, because you test them by picking up the jar with the lid. The outer ring can also be a place to hold dampness which can cause rust and eventually cause the seal to fail. Do you all remove the rings before pantry storage as well?
@DeepSouthHomestead
@DeepSouthHomestead 8 лет назад
+Farm Fresh Yes we remove the rings in 24 hours. And label the lids not the jars.

Wonderful video! Do the peas stay crisp after this processing method? I can't stomach the texture (or taste) of store canned peas so I only buy peas fresh and then blanch them for immediate, delicious eating. I'd like to grow peas this next season and store them to try to save some money since fresh peas are just so expensive here ($3.50 for barely 2 cups of peas), but I know I'll hesitate eating them unless they have that perfect al dente bite to them. Thanks!

I searched your channel, but found nothing about canning corn. Do you pressure can corn? Do you can orka/corn/tomatoes? My fav for winter. Running freezers and being in central Florida with poor electric service, I try to can or dehydrate as much as possible. Until the big scare when news reported bad green beans at a church dinner, grandmother and I always hot bath canned everything and when she died she had continued to refuse to change the way she canned. She was a real homesteader as was my other grandmothers. None of us ever got sick or died. I read 3 different articles that said that GMO veggies are the problem not the canning method, that the genetic makeup of the food. I can believe that. Talking about lids I am having a problem with the ball silver bands rusting. I have had the gold colored ball rings and never had a problem with them. I noticed that USA vs imports is the problem. Thanks for sharing your information with me, learning more everyday even at 72 years old.
@DeepSouthHomestead
@DeepSouthHomestead 8 лет назад
We havent started canning some things because it isnt time yet.We always used a pressure canner for everything except acid foods.I wont deny that GMOs probably play a part in a lot of things.Its strange we have just the opposite problem with jar lids the gold ones rust here not the silver ones.I do believe usa vs imports could be the problem.Thank you for your comments
