Stokes Purple Sweet Potato Pie

I miss her, and mr bucky. I learned a lot from their video's. I boiled my purple potatoes this time, but thought I would review the making of this pie.

thank you that helps me a lot it's my first year of growing purple potatoes.. because of Vikings football theme we have here in Minnesota I'd like to eat purple food every now and then.. thanks i like that simple recipe.. deep purple works for me..

I've been making the original Stokes Foods Purple Sweet Potato Pie Recipe for YEARS and was SO disappointed to find they sold their company to Freida's this year and no longer have the original recipe with the graham cracker crust. I was hopeful you may have it since you tagged it in your notes. If you have it, could you please please share it with me? You are my last hope in uncovering the original recipe!!

Do purple sweet potatoes taste different from the orange ones? I have never eaten the purple ones...that's funny that they are called "Stokes"...you could just adopt them...lol That is really different then...no spices, milk or egg in it...it must be really great tasting all on it's own...definitely turned out beautiful!! I was thinking the same thing about the cream...I might have to try it that way...just to see what the cream does to it...but, no spices, if it covers up the taste of the sweet potato. I love to have my sweet potatoes with a little brown sugar, butter and salt and pepper too...I eat fall or winter squash that way too. So good. Thanks so much for another great recipe, Phyllis!!

Please tell Mr. Bucky, I said, "Hey and THANK YOU!" Awwww, Ms. Phyllis, you are the best! I'm glad you got to try some. I'm going to check those out! I didn't know Whole Foods had them. I want to see if they tast the same as the Okinawan Purple sweet potatoes that I bought! I'm guessing they might not be as sweet, because if you add sugar to the Okinawan ones, you'd probably end up putting it in the trash, because the sweetness would have been way too much. They really are that sweet! The flavor is delicate, just as you said. It's like a delicate violet or lilac taste and fragrance. Ms. Phyllis, THANK YOU for all your kind words. Interesting looking pie Phyllis. I love the deep purple colour. I think the Korean purple sweet potatoes are too fibrous. Not sure about those ones. Looks yum

I'm going to look for purple sweet potatoes. It would be neat & fun looking to have a multi-layer pie, purple layer on the bottom and orange layer on the top.
