Strawberry and raspberry cake recipe.
The cake conquered the whole family from the first slice.
I wanted this cake to be the first cake on my channel, but then I postponed it.
Now with the start of the strawberry season, I thought that now would be the best time to prepare it.
Fluffy sponge cake, fine cream and lots of fresh fruit.
The vanilla sponge cake is a simple, fluffy one.
You can syrup the top, I chose to leave it that way because there are many fruits.
The cream fits perfectly in combination with strawberries and raspberries.
In the cream, you can add vanilla flavor or other flavors that you like and are suitable in combination with fruit.
I don't like strong aromas, that's why I only add a little vanilla essence.
If you like cakes with more cream, then I suggest you make a portion and a half.
Ideally, make this cake when the strawberries season.
If the strawberries are not sweet enough you can add more sugar to the cream.

I chose to decorate the cake with natural roses. Of course, you can decorate it as you wish.
INGREDIENTS

SPONGECAKE 20 cm
----------------------------------
- 6 eggs
- 140g sugar
- 140g flour
- 20g starch
- 3g baking powder
- a pinch of salt
- 30ml vegetable oil
🔥 180 ° C
⏰ 22 minutes
CREAM
------------
- 200g butter (at room temperature)
- 420g Philadelphia (or Goldessa) cream cheese
- 250g powdered sugar
- vanilla essence
- 500g fresh strawberries
- 250g fresh raspberries
DECORATION
----------------------

METHOD OF PREPARATION

VANILLA SPONGE CAKE
---------------------------------------
Beat the egg whites with a pinch of salt until you get a strong meringue.
Gradually add the sugar.
Incorporate the oil into the yolks.
Add flour, starch and baking powder and mix with a spatula.
Put the obtained composition in two trays with a diameter of 20 cm.
Bake at 180° C for 22 minutes.
CREAM
------------
Mix the soft butter (at room temperature) with the powdered sugar for 6 minutes.
Add the vanilla essence.
Add the cream cheese in three steps and mix with a spatula.
Cut the strawberries into cubes.
ASSEMBLY
------------------
Place the first vanilla top on a sponge cake.
Use an adjustable ring and acetate foil.
Put 2-3 tablespoons of cream on the sponge cake.
Form a cream edge.
Add strawberries; add raspberries.
Cover with a bit of cream.
Place the second vanilla sponge cake and repeat the operation twice more.
Refrigerate the cake for 4-6 hours.
Finish the cake in the finishing cream.
Decorate with edible roses and pearls or whatever you want!
