Stuffed aubergines in the south do so many different ways, but today I wanted to make a whole of mine ... in white with potatoes and cheese, delicate but very tasty and delicious!

I cooked the eggplants in the oven but if you prefer you can boil the shells and pulp separately in the water and salt and then squeeze well!

2 aubergines
300 g boiled potatoes (cooked weighs) about 3 potatoes
2 tablespoons grated cheese
Mozzarella cheese
1 egg
Salt, pepper, garlic, parsley
