Streetfood Series: Warm Peanut & Mango Salad

Every city has it's iconic spot where people windup for the day relax and enjoy local food. likewise Chennai beaches are the best place one can relax, enjoy Chai and few Snacks. Peanut salad has been our favorite snack when we visit the beach. I highly recommend this salad during tea time, it's very addictive. One tip I can give is please prepare with only warm peanuts.
Ingredients:
1/2 Cup Peanuts
1/2 Cup Chopped Mango
1/2 Cup Chopped Onion
2 Chopped Green Chilies
5 Springs Chopped Coriander Leaves
1/2 Lime
1 Tsp Salt
Prep:
* Wash and soak the peanuts for 4 hours
* Once peanuts are soaked, wash again and transfer to a pressure cooker along with 1/2 Cup water and coarse salt. Cover the pressure cooker, place the whistle allow the peanuts to cook for 3 to 4 whistles or until tender.
*Wash the Mango and chop into tiny pieces.
*Peel and rinse the onion, finely Chop and reserve.
* Remove the stem from chilly, rinse and finely chop.
* Seprate the Coriander leaves from stem, rinse well and finely chop.
*Squeeze 1/2 a Lime in a bowl and reserve
Method:
In a mixing bowl combine chopped, mango, onion, chilly, coriander, lime juice mix well.
Drain the boiled peanuts and add it to the veggies along with salt mix well and serve while the peanuts are still warm...Enjoy!
