At this time of year when the courgette glut really starts to hit, it can be a struggle to find courgette recipes that are exciting a delicious when you might possibly never want to see another courgette in your life… However, I present you: The Stuffed Courgette!
This is a simple instruction on how to stuff courgettes will give you infinite dinner ideas for using up your over grown courgettes and it can be shifted and altered to fit whatever you are harvesting at the time. In this version I am using basmati rice as a base with French Beans, Chard, Banana Peppers and Mozzarella but you can use almost anything!
