Venison Backstrap stuffed and wrapped in bacon then grilled on Traeger

I’m a big fan of wild game and in Mississippi we deer hunt. I typically harvest a couple venison deer for my family every season, and one of my favorite preparations for white tail deer is stuffed backstrap.
The Backstrap is the loin of the animal; it’s the tender meat sitting right along the backbone on each side. For this recipe I make a slit down the length of the backstrap to butterfly it.
Then it gets stuffed with a mixture of cream cheese, bacon, mushrooms, onion, and parsley. The whole thing gets wrapped in bacon to hold it together and to add a little fat because deer is incredibly lean meat.
It takes about 30 minutes on the smoker to fully cook and you want to run the pit at 350⁰ to brown the bacon. It’s best served medium rare so get it off the pit when you see the temperature around 125-130 internal. Just like any other cut of meat let it rest for 5-10 minutes before serving. Slice the backstrap into steak size portions about 1” in width and enjoy.
Ingredients:
- 1-2 Whole Venison Backstraps (loin)
- 8oz Cream Cheese
- 8oz Baby Portabella Mushrooms chopped
- ¼ cup Crumbled Bacon (about 6 slices)
- 1 small Yellow Onion diced
- 2 Tablespoons Bacon Drippings
- ½ cup Flat leaf Parsley chopped
- 2lbs Bacon
- 2 Tablespoons Killer Hogs AP Rub
- 2 Tablespoons Killer Hogs The BBQ Rub
Directions:
1. Prepare Pellet Smoker or any other bbq grill for indirect cooking at 350⁰. Add your favorite wood to the hot coals for smoke flavor. In the pellet grill I use a combination of Pecan, Oak, and Cherry cooking pellets.
2. To prepare the stuffing sauté onions and mushrooms in bacon drippings over medium heat. Add to room temperature cream cheese. Fold in crumbled bacon and parsley.
3. Trim excess silver skin from venison backstraps and cut a slit down the length to butterfly it open. Be careful not to cut through the entire piece.
4. Season with Killer Hogs AP rub and stuff with cream cheese mixture.
5. Wrap the outside with strips of bacon and season with Killer Hogs The BBQ Rub.
6. Place each backstrap on a wire cooling rack and set on the smoker.
7. Cook until internal temperature reaches 130 degrees or your desired doneness. The bacon should be brown on the outside.
8. Allow the backstrap to rest for 10 minutes and cut into individual pieces for serving.

I go half n half cream cheese & smoked gouda, add garlic and fresh jalapenos. I process my own venison too, made breakfast sauasage and hot italian brawts this turned out great.

I made this tonight and followed the recipe exactly as written with the exception of using regular cut apple wood smoked bacon instead of thick cut bacon. Smoked it on my traeger at 350 for roughly 40mins. This recipe is an absolute winner! It looks so impressive. Gluten Free and Keto friendly too! Thank you so much. Saw this video a couple weeks ago and processed another deer shortly after (we do it ourselves) and just made this tonight. Believe me when I say we have never eaten a better deer meal in our lives! This was absolutely amazing! Our compliments and thanks to the chef!

I’ve watched this maybe 4x in the last few weeks. Had a vacuum sealed back strap in the freezer and wanted to use it for a special low carb dish and really wanted to smoke it. Finally followed this recipe today and it turned out great. The only variations I made was I added 2 chopped garlic cloves and chopped chives to the stuffing. Cooked it on my charcoal grill with a log of pecan. Thank you Malcom for this great recipe. Will be doing this again.

HowToBBQRight - I just tried this with a deer I harvested this year and I have to say.... You Sir are a genius!! Now I will say I used my over and not a smoker because I don't own one but it still turned out amazing! I can only imagine what the taste would be on a smoker. Thank you for your videos. Keep them coming. I plan on trying a lot more or these recipes in the future.

Peter Klein Well he is a great chef. Is like the saying when you go eat at a restaurant, don't ever trust a skinny chef's cooking, trust the heavier one. And indeed we make the best food. I tell you what if I wife knows that I'm telling people this than I'm dead meat.... Lol But she gained 45lbs after we got together and that's within year and half. So yeah we know that's the best stuff.....

Made this tonight. Just used onions and bell pepper with the cream cheese. Bravo on the smoke time recommendation. The first blackstrap I have ever smoked and it came out great!

I made this a couple times in my pit barrel. I slow smoked it to 120 then opened it up to crisp the bacon. Also did it with pork loin. Excellent tips and recipe, thanks!

I tried this recipe for NYE 2019, made it for myself and several of my friends. Wow! What an excellent recipe. My backstrap was a bit bigger and required more time on the grill. About 45 min, and could have used a bit more time actually. I didn't use the BBQ rub. Just salt and pepper under the bacon. But really, this was delicious. Everyone liked it, even the ladies who usually don't like venison.

I've been waiting for you to cook venison, looks fantastic awesome job. I've done mine similar but with out stuffing , just a sweet savory brine and wrapped in maple bacon . i just harvested a really big doe last night so looks like i'll be giving this recipe a go this weekend Thanks again for the awesome video

since i saw this i have made several times, a 100% approval for camp meals, the only change i made is put one backstrap down, put filling on top of it then set the second one on top and rapped with the bacon. thanks again for sharing this

I have to say you hit all the important high points of properly cooking and preparing venison. I agree wholeheartedly, anyone who doesn't like it, has never had it done right. I stuff mine with apples, bleu cheese and walnuts since my husband won't eat onions!

I didn't have all the ingredients on hand but I was able to loosely follow this recipe. It was so good that I nearly swallowed my tongue! Even my girls, who are not big meat eaters normally, kept asking for more until we had consumed the two loins I prepared. Definitely a 5 star recipe!

Wow, well made video! I used to cut them into butterfly medallions then stuffed each one and wrap in a piece of bacon, secure with toothpick. This is gonna be my new way, much more presentable this way than cheese oozing out all over the place when individual wrapped. Think I might try stuffing with boudin! Thank you for this video. Looks amazing! I've been making stuffed back straps for years now, I do a lil different method, but it's ALWAYS a favorite!! And I NEVER end up making enough! I have turned people on to venison that swore up n down the would never eat wild game. ( No I do t sneak it to them I tell them what it is.) Great recipe brother!!
