Stuffed Zucchini Boats w. Ground Beef / Ultimate Beef Stuffed Summer Squash Boats - Recipe # 91

Here you get a great recipe for zucchini boats with a spiced-up ground beef and vegetable stuffing. We use the zucchini meat as part of the stuffing in order to not waste such a great ingredient.
Ingredients for 4 persons:
4 zucchinis
1/2 kg / 1 pound of ground beef
2 small or 1 large onion
4 cloves of garlic, minced
1 tsp of dry basilic
2 tsp ground cumin
10cherry tomatoes, chopped up finely
2 eggs
3 tbsp breadcrumbs
200 gr. / 7 oz yellow cheddar, shredded
150 gr. / 5 oz. parmesan cheese, shredded
salt & pepper
For the tomato sauce:
1 can / 14,5 oz. whole peeled tomatoes
1-2 tbsp balsamic vinegar
2 cloves of garlic, minced
salt & pepper
a pinch of sugar
- Half each zucchini and scoop out the flesh of each one.
- Chop up the flesh into smaller bits.
- Fry minced beef in neutral oil at medium to high heat until most water has evaporated.
- Add chopped onions and fry until transluscent.
- Add chopped cherry tomatoes and zucchini flesh to the pan and let water evaporate.
- Add spices and garlic to the pan and season to your liking.
- Remove the filling and transfer to two bowls to cool off slightly (20 minutes or so).
- In a clean bowl: mix can of tomatoes with garlic, balsamic vinegar, salt and pepper until almost homogenous. Mash the omatoes a bit.
- Add grated cheddar and parmesan cheese and eggs to the filling. Mix well.
- Add the tomato sauce to a rectangular lasagna dish and place zucchini boats on top.
- Fill each boat with the filling and top with more cheese for garnish.
- Cook in the oven 40 minutes at 200 deg. C / 390 deg. F
- Let the zucchini boats cool off slightly (15 min or so) before serving with tomato sauce and fx. cooked rice, a good loaf of bread or pasta!

Caramelize the onions first, then brown the beef with them, set them aside and cook the zucchini until you have cooked out the water. Add to the meat & onion. Add tomatoes. Are you seeing a pattern? You cannot caramelize anything if it is wet. So take it in steps

Nice dish, definitely going to add this to the books. I woukd suggest lightly salting the Zucchini scrapings, in order to draw out all the excess water before adding to the beef.

The recipe looks amazing, just the meat itself doesn´t look appealing at all for some reason. Maybe next time use good mince, not some processed mince from the supermarket. ;-)

This recipe is amazing. I made a slight adjustment. Used a 28oz can of whole Italian Plum tomatoes with Basil and used 2 of those tomatoes in place of the cherry tomatoes. Made extra sauce which was needed with extra tomatoes. Just added a little more balsamic vinegar, garlic, salt & pepper to accommodate extra tomatoes. Also remember the pinch of sugar, not on the recipe but she mentions it and adds it in the video.

My wife did some time ago , but after you fry up the sausage , dump it into a colander lined with paper towels and blot up the grease first . or maybe dish it out of the pan with a slotted spoon .

That’s actually how I did mine. Like I do with my stuffed mushrooms. And instead of tomato, I add red pepper.

Mine don't look that pretty. I am lazy. I don't scoop out anything. Good stuff and just put meat mixture on top with slab of American cheese. My son loves these. He is my baby. 54. lol.

Also I wouldn't bake the zucchini boats in that tomato sauce. Zucchini contains so much water as it is! I think it would make it too dang soggy?

@@gloriamaryhaywood2217 I make my sauce a little thicker and I use a 13 x 9 inch pan, filling 1/4” of the bottom. I also vary the cooking time based on how big the zucchinis are so they don’t overcook and become mushy.

If you add some ground up garbanzo beans for more protein and fiber in place of using meat, sort of like you would see in a falafel, and still using the egg and other ingredients you get a really delicious vege but not vegan dish. Drop the egg and use a rice flower to help with the binding the filling to get a vegan dish with NO gluten either.

I too cook for one and am wondering....did you cook the whole zucchini boat and freeze or did you just freeze the filling. Worried the Zucchini will be mushy once frozen.

I like the concept 🥒 I really didn't like the seasonings added in the meat, seem to be a bit much! I would do the sauce the same. Over all I like that its a 1 pan meal🍽 🍷that seems delicious 😋

I do the same thing.. but I make pizza boats with mine...I stuff with red onion .. bell peppers.. pepperoni.. sweet Italian sausage.. mushroom.. black olives.. a good pizza sauce .. a sprinkle of oregano....I like to put the sauce over the veggies and meat in my boats... I have seen people put the sauce in first ... what ever you like doing ...then I put fresh mozzarella cheese on top...the fresher the better... I like using the mini mozzarella balls .. they are just the right size... I kinda flatten out with my fingers and put them on top....then I bake them at 375 till cheese starts to brown and the boats are tender... pull them out let them sit for a few minutes and BAM... pizza boats!!!!! A healthier sub for pizza dough and they taste amazing ...Oh one more thing... and they didn’t do it in the video... I put just a little salt and pepper on the zucchini before I put toppings and sauce...also if the are huge zucchini.. rub a little olive oil on the outside of them after you slice and scoop them out and put salt on the outside as well... also if you want more tender veggies.. you can cook the bell peppers and onions a little before you put them in the boats ...but I like them kinda crips like on a good supreme pizza... but to each his own... I hope you guys try it.. I love them

I like how I can stuff a zucchini with almost any left over. A piece or sausage and toast add cream, butter, practically anything! I call it cabinet. I use what I have and my daughter asks for it every week! LOL

Hi Jimmy, I am also a seasoned cook being Italian from a big Italian family all my grandparents were from Italy, I was 7 or 8 years old making homemade ravioli with my mom and my gramma but the best thing to do with the ground beef is to make sure you drain it really well to get rid of any fat and after you scoop out the flesh of the zucchini and chop it up put in a strainer or colander and put that on top of a bowl and let it weep out and squeeze out as much water from the zucchini as possible that will make for a less mushy filling🥒🍆🍅🌶🥒🍷🍴😉

I made zucchini boats-not like yours though-the other day. Because I have a gas oven, I don’t cook them on such a high temperature nor do I leave them in the oven that long. The next time I fix them, I am going to try your recipe. They looked delicious.

The LESS meat use, the better. If you really have to , I found out that turkey is the best. Turkey bacon, turkey patties. It can taste like pork or beef depending the part you’re using. And best of all is 90% less fat. Vitamin B-6, D iron, Cobalamin and Magnesium. Pork on the other hand is the WORST thing to eat. These bottom eaters are not meant for consumption. Full of colesterol, fat and even found viruses, diseases and deadly parasites if not cooked well.

They can be kept in the fridge for up to 48 hours I’ld say. You can also freeze them, but make sure to freeze them quite quickly after cooking so they don’t sit out for too long. You could also use your hamburger mix for stuffed bell peppers - it’s the same technique to use 😊 Enjoy!

Oh my gosh that's tasty. Really nice flavor and texture. I would recommend though, that if you have a grand daddy zucchini (12" or more) to thin the skin a little.

I'll cook this without adding the raw egg.😖 The stuffing is in a boat, it ain't goin no where and the cheese will hold everything together just fine, especially once atop the stuffing to.melt. Raw eggs to already cooked food, ECK!😖

But then you put it in the oven and bake it for quite awhile. You don't eat it with the egg still raw.

@@sonyaclawson1514 Ah, thanks for bringing that up; because without raw eggs, the bake time is decreased considerably allowing the zucchini boat to be firmer and less soggy. See Sonya, we've just improved this recipe together by lessening the ingredients, reducing the bake time, and keeping the zucchini boat from sinking. 🤣 (pun intended, lol)... But seriuosly, how cool is that?!... 😉

Have been making these for years. You can vary your flavors. Sometimes I do more of a taco meat style. Sometimes I do a pizza sauce style with mozzarella and mushrooms. Can also do a barbecue sauce meatloaf style. Or even a tuna boat style. Could do an Italian stewed tomato version, or a chicken enchilada version. Many variations possible.

Actually the meat is the last ingredient to add .... it may be too overcooked by the time the other ingredients are added. Minced meat cooks fast.
