I finally opened some Subtext bags today (yes, Abel Salinas FINALLY my first one from that producer) and judging by how much I overextracted it with my SEY settings, it's significantly more developed like I remember September being, yet ironically very clean and luscious. Excited to see where these go once I dial them in!
@@CoffeeReviews LOL I mean than Subtext's roast level reminds me of September, which I had to grind much coarser than SEY. (I only had September's washed Ortega coffee.)
That makes sense and could definitely see that. They're probably the two contemporaries closest to each other (though it does feel like Subtext didn't develop their Abel Salinas as much as September did)
@@CoffeeReviews Quick update + question: the grind for these coffees is definitely coarser than SEY. I'm curious what temperatures you found worked best for Subtext coffees? I get the slightest roastiness with these and am wondering whether I should go lower on temp (I do SEY at 209ºF). Using an Aeropress.
@@manuscriptmastr haven't experimented too much with that aspect of their coffees but have kept it between our modest 96°C and their suggested 97°C. Last time we brewed Abel Salinas, understood a bit more of why you said you felt the way you did. Think there's something with that coffee that might naturally lean that way
Is slightly more developed than Sey also how you would describe September's recent releases? I'm always looking for something like a "Canadian Sey/TW" and September is currently my go-to for that style but Subtext and Luna are the main challengers I'm aware of in that category so I will compare them eventually.
Think it's tricky because September was playing around with Abel Salinas, but it was a one-off. Outside of that, their coffees have been very light and even offer some extra light coffees. Interestingly, Luna was the furthest along from the recent coffees we've had from all three. All that to say that September has more range while Subtext has a bit more consistency in their profiles
@@CoffeeReviews By furthest along you mean Luna doesn’t fit that very light profile as well? They don’t seem to prioritize washed profiles as much either so not really contending with the other two in that way also. And Subtext vs September being more of a range difference than a light vs lighter makes sense. I think Kyle is really looking for any coffee he wants to roast and then getting influenced by the green to some extent and not as much focusing on building a single clear identity for September.
The last run we had with Luna wasn't quite as light as we'd had from them in the past. You're also right, they have gone more towards the heavier processed stuff too
