Hi inspired by this ( but being a lazy cook ) and doing a super high fat Keto diet right now I put two eggs ( beaten ) and a splosh or two of heavy cream into a bowl and the stevia & then vanilla and then microwaved it on low ( oh dear I know ) and watched it carefully and it was not very pretty but it passed for egg custard ( no crust ) and to improve it a bit I put a lite dusting of nectress ( monkfruit ) which is crystalized and crunchy like real sugar...and cinnamon powder on it too..to pretend I'm eating real dessert...probably six grams total carbs if I am guessing right and im saving half the bowl for the morning... not the worse thing I've put in my mouth. Thanks for the good custard recipe!!

If my comment helps.. I have tried this recipe with coconut milk and it came out fine... 😊😊😊 I am on diet n this recipe is just heavenly... !!!! I cooked every think on slow heat to make sure m not ruining anything..

Can I use almond or soya milk with added double / heavy cream instead of the full cream dairy milk? And replace the corn flour with Xanthan or Guar gum instead?
Sounds like a great Idea, does it inhibit the setting though I wonder. I know when I make Rum and Raisins Icecream, I soak the Raisins in Rum overnight and they are just great. Thanks Steve

@@Steve-Owens when I was a boy we would buy milk and sure enough you would see the cream on the top as it settled out, that stopped years ago, the cream is taken before the milk is sold now. The dairy industry decided that milk is just the milk, so we can buy milk with no cream, semi skimmed reduced fat milk and fully skimmed.
triathnrs11 That explains your question, it made me smile, you see we English see custard as a sauce. If you want a set custard take a look at my Portuguese Custard Tarts I am certain the custard in that will set as you like it and could be substituted with Stevia..

In many low carb diets dairy is grouped in with proteins, like cheeses and yogurt. Many low carb diets eliminate STARCHES instead, like rice, potatoes, pasta, bread, etc.
This is Just Custard, used for pouring over Puddings? It's not a set custard, your not from England are you? We just make custard and serve it warm on dessert, you seem to be looking for a set custard, it's a different recipe and needs more eggs, that's why I don't understand, this is just traditional pouring custard, too good to waste on setting, warm custard hold more flavour than cold by the way :o)

Get a life, you made a mistake, grow up. The idea here is to leave out Sugar which is 100g of Sugar = 100g Carbs, you want to try making Good Custard with crap milk, which is by the way 100g of Milk 4g Carbs (silly boy) Then go for it, knock yourself out with it but be honest, you made a mistake and learn rather than come back with further silly statements. My work here is to try and help people and I am happy to chat and advise but your knee jerk reaction to criticise something you now nothing about is just not nice. I'm not trying to make LOW fat Custard, I wouldn't touch such crap, so don't ask me, custard such taste good at the end of the day, which this absolutely DID. So this is LOW CARB CUSTARD. and I suspect you now agree but will not be man enough to admit. ??
One Tbspn cornstarch = 7grams carbs. Not a lot ! The cream in full cream milk has no carbs ! So what do you wanna use instead 1% milk, which will turn out like water or some fake plant milk which turn out tasteless watery or heavy cream which will be too heavy? Maybe it's possible why not go find a recipe?
