I remember hearing that this theme would be instead used for the final boss, i wonder what the new song (if it happens) will be?

Don't know why but this sounds like either a theme for a last stand or your final escape from a doomed place. (Yes i know the context behind Sucrose Snowstorm.)

I don't know why I mistook sucrose for something citrusy, sour and corrosive in the title card, at least that's what it conveys, but a quick search shows that it's a fancy scientific name for the chemical structure of sugar. That is, it's just a snowfall of sugar (if this game didn't already have enough of it)
