1 Cup Frozen Organic Sweet petite Green peas - rinsed with hot water
3/4 Cup Shredded organic Carrot
3/4 Cup English Cucumber - seeds removed
1/2 Cup thin sliced Organic Celery
!/2 Cup Radish slices quartered
Cubed organic Zucchini
1/2 small Red Onion Sliced Thin
1/4 Cup Fresh Chopped dill
1/4 Cup Fresh Chopped Italian Parsley
(add more fresh herbs above, if you desire)
optional adds - organic cherry tomatoes - halved
Light Sea salt, Cracked Black Pepper
dressing a mix of
1/4 cup of (liquid saved from can of chickpeas or Cannellini Beans)
Organic Dijon Mustard 1 tsp or 1/4 tsp ground mustard
1-2 garlic cloves, 1/4 tsp turmeric , 2 tsp Apple cider Vinegar, 3/4 cup Olive Oil
blend first 5 ingredients in small blender
then add the Oil to finish
