Yo guys, just trying out a new trick I saw on the web the other day while I was scrolling around. Can boiling water make for crispier chicken skin? That's what we're testing today!
The basic concept is that you pour boiling water over chicken skin to blanch it before cooking, bbqing, or smoking. Today I'm smoking my party wings after blanching them with boiling water to test out the theory.
