Super Crispy Chilies:
dried chilies: 50g little bit more than 1 cup
raw sesame seeds: 80g 1/2 cup
corn starch: 35g 1/4 cup
salt: 4g 1/2 teaspoon
sugar: 3g 1/2 teaspoon
egg white: 10g 2 teaspoons
water: 10g 2 teaspoons
oil for frying
blanched peanut kernels: 200g about 1cup
salt: 2g 1/4 teaspoon
chili oil: 2g 1/2 teaspoon
steps to fry peanuts:
1: add peanut into cold oil
2: heat up the oil with high heat first
3: when see bubbles, turn the heat on low
4: fry for 7-8 minutes
5: add salt and chili oil
steps to fry chilies
1: cut the dry chilies, and soak with hot water for 30 minutes
2: simmer for 5 minutes
3: mix sesame seeds, corn starch, salt and sugar
4: add the sesame mixture to chilies, gently stir with your hand
5: mix egg white with water
6: add the egg white mixture to chilies, stir
7: oil temperature 140C /284F
8: fry for 7-8 minutes till crispy
