Super Crispy Onion Bhaji
These onion bhajis are super crispy on the outside and soft and fluffy on the inside. They are perfect for a snack or light meal.
Ingredients:
* 2 large onions, finely sliced
* 1 tablespoon of coriander powder
* 1 tablespoon of cumin powder
* 1 teaspoon of turmeric powder
* 1 teaspoon of garam masala
* 1/2 teaspoon of cayenne pepper
* 1/2 teaspoon of salt
* 1/4 teaspoon of black pepper
* 1/4 cup of all-purpose flour
* 1/4 cup of rice flour
* 1/4 cup of cornstarch
* 1/4 cup of water
* Vegetable oil, for frying
Instructions:
1. In a large bowl, combine the onions, coriander powder, cumin powder, turmeric powder, garam masala, cayenne pepper, salt, and black pepper.
2. In a separate bowl, whisk together the all-purpose flour, rice flour, cornstarch, and water.
3. Add the wet ingredients to the dry ingredients and mix until just combined.
4. Heat the oil in a large skillet or saucepan over medium heat.
5. Drop the batter by spoonfuls into the hot oil and fry for 2-3 minutes per side, or until golden brown and crispy.
6. Drain on paper towels and serve hot with your favorite chutney or dipping sauce.
Tips:
* For extra crispy bhajis, use a mixture of all-purpose flour, rice flour, and cornstarch.
* Make sure to not overcrowd the pan when frying the bhajis, as this will lower the temperature of the oil and prevent them from getting crispy.
