脆皮燒肉; Cantonese Roast Pork Belly
Serves 6 - 8
These roasted pork produced in this way retains the gravy, the skin is crispy and the meat and skin are not separated.
一公斤脆皮烧肉食谱,这样做出来的烧肉保留了肉汁,皮香脆而且皮肉不分离。
Ingredients材料:
1KG Pork Belly (2.2pounds) 1 公斤 五花肉
1 tbsp white vinegar 白醋 1汤匙
Seasoning调料:
1 tsp Five spices powder 五香粉一茶匙
1 tsp salt 盐一茶匙
1 and half tsp sugar 糖一茶匙半
half teaspoon white pepper powder 白胡椒粉半茶匙
2 tsp oyster sauce 蚝油两茶匙
1 tbsp Mei Kuei Lu Cooking Wine玫瑰露酒一汤匙
And this is how they make it. (It’s easy!)
1) Choose the Right Cut of Pork.
What we’re looking for here is what in Chinese is called 五花肉, which literally translates to ‘pork belly’, meaning there’s a clear distinction between the skin, the fat, and the meat.
2.) Season the Meat, But Not the Skin
while you should season the slab of pork belly, leave it all for the meat and fleshy parts, and none on the skin.
3.)Pricking lots of holes in the skin = puffy crackling with bubbles
4.)Wrap flesh with foil
Protect the exposed flesh of the pork belly to ensure it doesn’t dry out during the slow roasting time.
5.) Chill it in the Fridge overnight
Lay your pork belly out onto a tray and leave it uncovered in the fridge. This step allows the pork skin to further dry out, as the cold air of the refrigerator will sap away the moisture from the skin to another degree.
6.)Put under the fan for an hour
to let the skin more dried and let the meat back to room temperature.
7.)Rub salt EVENLY on the skin
This is essential to ensure you get a nice, bubbly and crispy crackling, rather than a rock-hard flat sheet of impenetrable skin. Salt = bubbles
8.)190°C/ 374°F Roast 50 minutes,
210°C/410°F 20minutes
230°C /446°F upper heat 5 to 8 minutes for a total of 1 hours 18 minutes
9.)Rest 30 minutes - Rest the pork belly for 30 minutes before cut it. This is absolutely essential for the pork belly because it’s soooo crazy-juicy, that resting allows the pork juices to redistribute throughout the meat. If you skip this step, the juices that should be in your mouth will just run everywhere when you slice it.
