That crunch in the beginning is what got me! 😄😄😄😄 I never had much luck with my eggplant. It always came out too tough or chewy. Then I did a search and found your video and found out what the secret was, and it was the salting and rinsing step. It made all the difference! It came out so tender! So thank you so much for this recipe. You are the eggplant master! 😂👍🏼😄 I made it today and it came out beautifully. I sliced and fried it and I am going to keep it in the freezer for sandwiches or take out what I need for a quick eggplant parm dinner. I figure I’ll save myself a ton of prep work that way. So thank you again for your video and recipe. It made all the difference!
