As you might have read, it is recommended to go for this trophy in the last story-boss fight, as you can collect as many magic potions you need, as long as you don't kill the boss. If you're past this point (like I was) and don't want to go through all the story again, here's the very easy and quick method I found.
So in order to defeat 500 Romans under the effect of a magic potion, go to the Esohandsum camp in Tyre. There are set spots for magic potion and a lot of romans to defeat at some spots. So go wild until the trophy pops!
