I do this sometime too. One can also mix some cornbread and pour over the top and bake it until cornbread done. Sometimes I add chopped green or red peppers and some chopped dry onions to the cornbread. Green onions give it a little kick of flavor too. For Italian pasta dish one can add chopped black or green olives to the cornbread and bake over the pasta dish in a pan. Combines your bread with the main course into one dish and really looks good when placed on the plate for serving. About 1/2 inch of batter on top makes for about a one inch topping after baking. Sometimes I add a can of creamed corn to the cornbread mix and it gives it a creamy texture. Some butter also adds great flavor. Can brush crust with honey for some dishes - after baking for a sweet kick.
