One other advantage that you didn't mention - the Emile Henry weighs a fraction of what a cast iron (with or without enamel) which can make a BIG difference if you have any back problems and an oven that requires bending. This pot is saving my back! Thanks for the review!

For those considering a Le Creuset enameled cast iron Dutch oven for bread baking…I caution you. Regular preheating of the empty vessel, covered or not, does destroy the enamel and its non stick quality. LC advises to not heat their dutch ovens empty, for good reason. My favorite 7 qt LC DO that I’d loved for years got destroyed with all my pandemic bread baking. LC replaced it as a courtesy but made it clear the damage was from improper use. I switched to the Emile Henry bread bakers for this reason, and with good results. Preheating the ceramic is essential as the material heats up slowly and you need the instant heat contact to the dough for good oven spring. Also, don’t just FLOP your proved dough into the baker. Notice how his degassed from the impact. Use a parchment sheet to safely and gently transfer your dough into the vessel and leave it peeking out of the pot handles during the bake.

Give this baked potato cook a try. Place potatoes on a tray, brush entire pot with melted butter, sprinkle with kosher/flake salt, bake 450 for 45 minutes. :)

Scott, excellent review! At the beginning of the video I thought "no knead", and I am glad you gave a no knead example. A lovely vessel, and practical too. As usual, a good thorough review. I use their long Italian baker for sandwich bread. It too is practical and pleasant to use. Staub makes great ceramic cookware. Their 9x9 inch square baker with lid is a real workhorse for me. It's a good choice if you don't need a big 9x13 baker. The lid makes it a lot more versatile. If you like making no knead bread, the book Toast Crust Crumbs by Stafford is excellent. No long rise times. Good recipes.

That is good to know. I was actually looking for some of their bakeware when I found the bread pot. They had a message up about redesigning their website and I couldn't find what I wanted in stock but hopefully the supply chain will work itself out. I will get one of those bakers when they arrive back in stock.

Thanks for the video Uncle Scott, please keep them coming! I bake a lot of sourdough bread at home using a very basic Lodge dutch oven and it works great! I have tons of fancy French cookware including some large ceramic coated Le Crueset pieces and the Lodge works best for this particular application (imo) for a fraction of the price.

Good call on that Lodge. We have one too and I had some yapping abot it in the video, but it was already getting long in the tooth so it got cut. We use a Lodge and a Le Creuset for homemade loaves pretty often. Work very well!

Thanks for this video! I just got the Emile Henry Batard (Italian) bread loaf baker, and I was worried about the preheating and the need for parchment paper or oiling of the baker. I hope my bread turns out as nice as yours!

Yes, Emile Henry makes very nice cook/bakeware unless you are a klutz like me. I have two lovely dutch ovens that no longer have lids. Sadly, they have changed their molds since I bought them years ago and the new replacement lids don't fit. At any rate, if you have a bread stone or steel, you can get the same effect by putting a large metal mixing bowl over your loaf when you put it on the stone. Spritz the dough with some water first and remove the pot after the first 30 mins or so.

Oh no! I am worried about dropping mine too. I've actually cracked the handle off of a cast iron, so even "tough" pans can break too.

I use a Dutch oven or cast irons combo cooker for most bread baking but I do actually love my Emile Henry baguette baker, which looks similar to this.

I think they make lots of different shapes and sizes for break making... how do you like the baguette baker? We've just been using pans but maybe the enclosed EH is the way to go.

@@UncleScottsKitchen I love the baguette baker. It’s one of those probably not necessary products, but really nice to have. Makes straight baguettes easily and I love not having to deal with a steam bath.

This is exactly the video I needed, Scott, thank you! Perfect! I've probably said this before but if you put up some affiliate links to UK sites I buy cookware quite often and I'd love to support the channel this way. Unfortunately most of the links are US only. I've been debating by the Emile bread cloche but I think I'll go for a Staub cast iron dutchie because it's more adaptable (I have a Le Crueset but it's oval shaped and too large for bread making)

Have you used any of Emile Henry other bread bakers. I just ordered the crown baker. Can't wait to try it. It will be my first bread bakers by Emile henry.i am considering in buying several other ones if this one works out.

I think they are all made out of the same material... should just be a different shape. I like the one I have a lot!

@@UncleScottsKitchen They are in fact made of very different matierials. Henry uses both earthenware which can only be used in the oven, while those trademarked "Flame" such as yours is made of ceramic, and is safe to much higher temperatures (800 F) so it can be used on stovetops as well as grills.

I hope you were able to get your crown baker before Emile Henry stopped making them. I use mine all the time. Just made a batch of sourdough fruit and nut rolls two days ago.

I just got a Loaf Nest which I believe is from The Netherlands. It appears to be like this but has a silcone removable liner. I’ve made both no knead and kneaded, slow rise sourdough and they both came out great. Has anyone else used it?

Don’t let Scott’s review deter you from using the Bread | Potato Pot for vegetables! He didn’t bake the vegetables and potatoes right! I pierced mine like always, then added some cloves of garlic and topped them with rosemary. My baked potatoes came out fluffy, creamy and perfect. In fact, they were simply the best baked potatoes I’ve ever had, besides Pappadeaux’s baked potatoes, which never can be beaten. This purchase was well worth the money. I’ve got a boule in it right now with a honey-sweetened loaf inside.

Nice video. Thanks. I have a question regarding the close enamel coated dutch oven, was looking at a lodge one but it said that it cannot be preheated or the emamel cracks. Do you preheat yours?

My KitchenAid dishwasher just had to be replaced and I also had to replace a bowl on my KitchenAid mixer so I am down on them at the moment! Maybe I'd have more luck with the ceramics ..

Does Dutch oven size matter for baking bread? I have a Le Creuset 7.25 quart. Would that be too big to do a small loaf of sourdough? Thank you for the informative video.

It does not matter, no. I have the same, 7.25qt LC, I bake a loaf or two a week, and it does a fantastic job of retaining heat and steam for the initial part of the bake.

@@fadoodle No problem. For the 7.25qt dutch oven you should get 9" bannetons and 10" parchment paper rounds to prevent sticking. These both will allow the bread to sit pretty without sticking.

On Emile Henrys website it says that the Round Bread Maker: Goes in the Freezer/Dishwasher/Microwave /Oven Is Céramique Lead, cadmium and nickel free And has 10 years warranty So no need to worry about dropping the lid etc. but save your receipt! 😊

I have the Challenger bread pan, as well as Le Creuset for my sourdough breads. I bake both loaves at the same time! But the advantage of these over the Emile Henry Bread Pot is that you have more options for different shapes; batard and baguette!

@@UncleScottsKitchen The design is genius! There minimal chance of burning oneself with the low sides. The side handles are in the perfect position to lift the heavy cover. Because it's a two piece set, one can let go of their gym membership, if you know what I mean 🏋‍♀😁 Another note the browning of the breads differs between Le Creuset vs the Challenger, so I just work with it. In addition, I use parchment paper to lower the dough into the Le Creuset, holding my breathe so I don't burn my hands.

I use a Dutch oven (a long owned Le Creuset, French brand made in France, but as you mentioned, it seems to be now made in China) and a black metal bread cloche. Emile Henri sell both but I find the brand a little expensive here in Australia. As you said, once you have all the bread basics it's probably unnecessary, but it looked effective with not too much cleaanup. I would say useless re vegetables, although you might make a small pot of soup? Not sure. I'm with you about French brands being made in France, hence my Magimix food processor - just sublime. And then there's Danish Scanpan that's made in Denmark. Scanpan has cheaper Chinese-made lines and a little more expensive lines made in Denmark. You've really got to check things closely. Re bread making equipment - you haven't checked Mockmills? The 100 flour mill is excellent, but definitely to be bought when discounted (made in Germany) 😊

I think the made in China issue was specific to Le Creuset ceramic bakeware, not their enameled cast iron products.

I also recommend the Dutch combo by Lodge. It's not enameled and made in the States, but I found I had better results for my sourdough boules in that than in my enameled Staub. It's pretty affordable if you wanted a multi-purpose set that's made of safe materials that will last forever. 👍

I've made several no kneed loafs of bread. I used my 2 qt lodge dutch oven. They were wonderful. When I wanted to make larger loafs i picked up a Victoria 4 qt dutch oven. Again my loafs came out great. Problem was my household includes myself, my wife, and my mother. Mom doesn't eat much bread and neither does my wife. My bread was going to waste! So I stopped baking bread. Maybe I'll go back to the small loaf and eat it all by myself.

Another advantage with ceramics vs cast iron is weight. Not really an issue for me, as most of my relatively small pieces of home cookware are far lighter than the much larger pots and pans I use at work, but for many, that might be important.

That is a very good point... I have a Lodge that weighs in at about 13 pounds (with lid) and the Le Creuset is over 9... the Emile Henry is just a little over 5. Lots easier for some people to move around.

Working on it! So far lots of cream of wheat for the boy, cheese grits, soup, that kind of stuff. What's something fancy to cook in a 1.4 quart sauce pan? Need a big finale dish.

FYI Scott - a lot of the time, a brand might state something like "Made in [insert developed Western country here]" but might use underpaid immigrants in the labor in order to avoid the publicity issues with "Made in [insert developing country here]". It happens quite frequently in luxury fashion. In fact, that "Made in Italy" tag might be covering up for the fact that it's made by a poorly paid Chinese migrant for Chinese wages in an Italian contractor factory. Something to be careful of and not to fall for!

You are 100% correct. When I spent some time in Florence it was known that lots of "Made in Italy" products were produced by illegal Chinese immigrants over in Prato. Although no one said officially, I figured it was one reason covid broke out in Italy early on as well. I think similar situations happen all over.

The Chinese make world class stuff - but American conglomerates want only the junk so their mark up is higher. My neighbors son lived in Chian for seven years and his wife brought over Chines made - for the home market cookware. I've never seen such quality in Chines made goods before. It is the eaqual of any ountries brands - but still much cheaper.

I appreciate anyone making an informative video no matter if it entails earning some income from advertisers. But having an ad showing someone cleaning their ears pop up 20 seconds into a video on preparing anything edible was a complete buzz kill. Perhaps the video is informative, but my viewing ended with the ear wax cleaning session. I wish you success, but accepting ads more conducive to not inducing a gag reflex might be a wiser choice for food oriented videos.
