Eggplant- my favorite is just to grill it, slice long thick’s slices (we do zucchini and onions as well) make a marinade of olive oil, balsamic vinegar, honey, salt and pepper. Let it set for 15+ minutes. Then cook on the grill. Great side for grilled meats. Also make veggie tacos- corn tortillas, spread hummus and lay a grilled veggie in there 😘. Eggplant Parmesan! Great in lasagna, can pair with meat but I do a veggie lasagna. Diced squash, zucchini and eggplant. Noodle, ricotta, veggies, mozzarella, sauce, repeat until your pan is full. The eggplant gives that meatinesss. Curry, yes! Ratatouille, yes! There are some good eggplant meatball recipes as well. Great for spaghetti and meatballs or meatball subs.
Mousaka is a great way to use eggplants. Traditionally it's made with lamb mince but you can still get a nice result using beef mince. It's a great meal to prep ahead and then finish in the oven just before eating.
I've walked a similar corn journey. This year, I grew golden sweet, and we've loved it. I had planted enough for eating and freezing but it so delicious we've almost eaten all of it off the Cobb fresh. Next year I plan to grow much more. The plants were so strong and tall. 2 Cobbs on each plant. It's been a brilliant success. I love all the carbon rich material for my compost. We are Auckland area and my challenge is not warmth but water as my gardens are very free draining, but they've handled limited water well. I'm even tempted to save some seed and just see how varied and terrible the off spring are.
Pumpkin is used as stock feed in many countries. Can you please hold the camera a little more steady or use a pole or stand. A request not a criticism, I know that it is very hard to do. I use eggplant and courgette as the pasta layers in lasagna. I also make a moussaka dish with them. Lamb stew I use verjuice or balsamic vinegar in the meat with layers and white or cheese sauce like lasagna. You have made amazing progress. I am in awe of what you have achieved. A baby and the garden is coming along really well.
I over wintered a Ricotto chili a few years ago in a glass lean to in Kaiapoi Can. It was a good size and lasted a couple of years at least. I watch an US show that advised cutting off the leaves and so I did that the last 2 wintwr and put in a pot in my green house . Totally failed. The plant just died. I'll try potting up and leaving the leaves on this year
Hey! rabbit questions... I figure on 3 buckets for a trio, is it ok to interconnect them like in the wild? It's crazy hot here and that would add airflow. Also, is a bucket big enough, or would you ise a larger storage bin?
@@Josef_R personally I'd go for totes, leaves room for adding Flemish into your program if you choose to. NZ whites can get pretty massive with the right breeding too
