Today we are going to challenge one of the world's stinkiest foods, "Swedish fermented herring", and as a chef, I am curious about what it tastes like. It smells and tastes a bit strange, and the salty level is quite high, don't try it if you are not sure.

大家好,今天来挑战世界上最臭食物之一“瑞典鲱鱼罐头”,看到很多视频创作者都有挑战,其实作为一个厨师还是非常好奇到底是什么样的味道。鲱鱼罐头作为食物来说的确算重口味,闻起来和吃起来都有臭味,并且非常的咸,不建议大家轻易尝试。

Swedish guy here, I actually enjoy the "surströmming" when assembled properly. You did a good job with the wrap ("klämma"). We usually add boiled potatoes also. But there are so many versions of the dish. The trick is to add adeaquate (lagom) ammount of fish into the wrap according to your preference. Will try it out with ginger, spring onions and chilli the next time I eat it. Cheers!

The most amazing thing in this video is how much RESPECT Wang Gang shows to the food. Other Surstromming challengers often treat it as a toy or even something to laugh at like in a freakshow. Here he treats it as legit food which has existed for hundreds (thousands?) of years and gave countless Swedish people in the past precious protein and energy. He really thought about how to make it taste nice instead of make the food into a laughing stock.

Totally agree. I never tried this before but many countries including China have their own “strenge” food which are popular. Even some food I love so much makes some people ran away (durian).

I am from Sweden and I've only eaten Surströmming once. But just like Chef Wang is showing, they are eating it in the proper way. I like that they showed the product respect and were not immediately turned off by the smell (as people in so many other videos on youtube)

幫大家翻譯一下有稍微順了一下翻譯字句更貼近一點我們講中文的人的感覺 (Help this friend from Sweden translate to chinese user) 我來自瑞典,我也只有吃過一次鯡魚罐頭,但是就像王剛師父展示的那樣,只要用正確的方式食用就沒有問題,我很喜歡王剛師傅表現出對這個食物該有的尊重,而不是像多數人被這氣味嚇走(就像是youtube上其他影片一樣跑走) 譯者個人想法 我以前也看過不少於鯡魚罐頭但是很少看到像王剛師傅開的這兩罐一樣完整的,多數的罐頭都是已經過度發酵導致罐頭膨脹變形的狀態,感覺王師傅這個應該沒有那種都膨脹到快炸開的那種味道重了

In some of other videos, the fish inside the can were already disintegrated. Perhaps some of them were left unopened for too long.

@@_Wai_Wai_ Yes I think they weren't stored properly. It can be stored for several years under cold conditions. Of course the fermenting process will keep going so the smell will get worse

I’d say most chefs are rather respectful when I comes to food. Most of the other RU-vidr are just exaggerating their reactions for views. But then again, everyone has a different palate.

他们耐受度肯定比一般人高,农村的农户自家发酵粪肥期间,连续七八天的时间里空气中始终带着一股臭味也很正常,所以突然闻到臭味不会太突兀,更何况王刚还是做菜的厨师,我感觉他饼里的辅料还是太多了,有点遮盖了鱼的味道,这个鱼就是主食面包+酸奶油+生菜叶一口闷最舒坦。但以臭味食品而言这个肯定是最上头的,比臭豆腐还狠。邪神一开始有点色厉内荏啊,吃了一点才踏实下来。

I love how chef wang treats the ingredients with respect, even the infamous canned fish. No matter what happens, he still tried to give life to it and tried to be as authentic as possible. Mad respect.

Here in Germany we have a very similar dish, though our pickled hering is made slightly differently and doesn't smell as strong. We prepare it by first washing the fish to remove some of the salty taste, then take out the bones and cut into bite sized pieces. Mix it with sour or heavy cream, sliced apples and finely sliced onions. Serve on fresh bread. Alternatively we eat pickled hering in a salad made with diced tomato, onion, pickled or fresh cucumber and hard boiled eggs. Season with neutral oil, salt, pepper, a little lemon juice and if you like you can add chopped dill.

​@@yichenzhao7075 It's often said that the traditional preparation method of Icelandic shark is to urinate on it, but that's not true at all. The smell comes from the ammonia which is brought forth during the fermentation process. The type of shark used has a higher content of urea in its own system as they aren't capable of urinating. The urea is naturally seeped from their body via osmosis, but there's always some urea present which is converted to ammonia during its fermentation. This fermentation usually takes between 1 - 3 months. This process of fermentation is necessary in order to eat the shark, as the ammonia contained in their meat is quite poisonous and has been known to kill (even polar bears). There are other methods available that don't call for fermentation, but these require refrigeration which wasn't available until relatively recently.

if you are afraid of the smell, you can try this method. Have a small bucket of clean water, submerge the container and open it under water. This will get rid of most of the smell and it also make the fish less salty.

我媽之前把買的魚大夏天的放在冰箱頂上(因為隨手放到那裡忘記放到冰箱裡了)後來晚上才發現,一打開已經臭了,那個味道我這輩子忘不掉⋯真的是生化武器,如果鯡魚罐頭是那個味道,那我就有概念了😂

They usually speak in their own Sichuanese dialect with their family so I guess it’s not *this* type of the language you wanted to learn. Are there any peculiar food you can find in Chicago?

@@remiliascarlet4412 Thank you for identifying the dialect for me! I downloaded an app on my phone to teach basic Mandarin and it has been wonderful to be able to read a few words! Three special Chicago foods are the Chicago deep dish pizza, the Chicago style Vienna hot dog, and this really delicious smoked shrimp. For alcohol, we have a hard liquor called Malort that is so bitter you have to be from Chicago to handle it😅

Take care Wash hand and spray all the things you bought outside with alcohol, and better don't buy frozen seafood and meat, too many cases said the frozen food polluted by the virus.

Another swedish guy here. Love your videos, fun to se surströming come up. I did not think surströmming would be a difficult dish for you since you are very familiar with the fermented flavours and are a adventurous eater. Fermented flavours seem to be more difficult for Americans, they do not have a very "advanced palate" I like that you did your research on how it should be eaten.

Yes, I think you pointed out the key here. Chinese or other Asian cultures have similar fermented flavour profile in our cooking. Another similar food item to this fish could be Vietnamese fish sauce. Delicious if used correctly.

Fermenting foods is by and large a preservation technique which has turned into a flavoring technique as modern preservation methods became available. Many ares of the world have been preserving foodstuffs the same way for thousands of years. America, on the other hand, doesn't really have those thousands of years of development and use, except for the Indigenous Peoples who pre-dated the settling of the continent. "American Cuisine" as a whole is a mish-mash of MANY cuisines all combined over the years and adjusted to accommodate ingredients available here and/or not available elsewhere. You would say that we do not have an "advanced palate". I would say that anything boiled, whether it be a piece of beef or a potato, is either the start of a soup course or is intended for infants or the elderly...not an integral part of a meal.

我是(马来西亚) (沙巴) 土生土長华侨 虽然没吃过这样罐头咸鱼 只知道 经过用盐水腌过的鱼 或者只用盐腌 鱼身还是软软的 一般都是很臭 经过油炸 真的 太香了 我们客家话 叫(梅香咸鱼) 最美味的就是 拿来蒸猪肉 💖💖💖💖

Great video! I understand that you were extra careful since surströmming is so expensive in China. Here in Sweden the brand you got is about 50 yuan per can. We also usually eat it in a wrap with potato, onion, chives and maybe other things. There are hard core "enthusiasts" that eat the fish whole straight from the can without gutting or deboning it at all. That is a bit too much for me though.

lots of fermented food has a sour/sweet aftertaste. And lots of Chinese dish use ingredients has been process in such way. And also another interesting thing is many Chinese consider little bit amount of bitterness will give you sweet aftertaste hence some Chinese dish like to use ingredients with bitter taste (such as bitter melon, citrus peel).

其實那個鯡魚罐頭…是把整條生魚跟 鹽 封在罐頭裡 讓他自然發酵, 有時挑選鯡魚罐頭 會 發現 變形 膨脹, 其實罐頭並沒有壞掉, 由於自然發酵的關係才導致罐頭變形膨脹, 就因為是自然發酵的關係, 所以打開罐頭的時候會有一股 很濃的腥臭味, 並不是代表罐頭壞掉喔^^, 那是自然發酵的過程所產生的味道, 若是要食用 鯡魚罐頭, 一般國內的人是無法接受那種味道, 打開罐頭的時候, 將罐頭裡的發酵過的水倒出,然後魚肉跟內臟分開, 再來進行料理 食用^^。 國外多數的做法~他們都是拿來烹煮過再來吃,做法可以拿來乾煎…或者是放著鋁箔紙放進烤箱 烤過, 之後再搭配 烤過的吐司或者是麵包再加上一些生菜, 就可以食用, 如果要吃生的話, 打開罐頭必須把 魚肉跟內臟分離, 魚肉的部分 弄碎 可以跟沙拉拌在一起吃喔^n^

A very respectful review of an important piece of Swedish food culture and history! My family on my father's side look forward to the seasonal feast called a "Surströmmingsskiva" every year. He and many enthusiasts actually age the cans for a couple of years after the expirationdate. This must be done at low temp, around 1,5°C so the lactic acid does not break down the meat. The flavor supposedly gets alot more rounded and the smell wont be as strong. A fun side effect of the aging is that the cans puff upp from the fermentation into the shape of a ball. This is considered a quality mark by a true connoisseur of surströmming:). Some people have aged cans for as long as 15 years and been very happy with the results! You should try it out with the second can as an experiment to see if you like it better:). Also, a tip is to serve it with some freshly boiled, warm slizes of potato on the wrap. The heat might mellow the flavor much like when you temper a pungent cheese to enjoy it better. Thanks for another great video and best regards from Sweden!
