Swahili chicken biriyani is one of my favourite meals from the coast. A rich and thick rono (stew) with tender chicken over fluffy and aromatic basmati rice

ingredients
- 5 large onions sliced & fried
- 4 chicken thighs (boneless)
- Plain yogurt or Fermented milk
-paprika, Biriyani masala, turmeric, salt for marination
- 6 cloves Garlic & ginger (2 tbsp)
For the curry:
- 4 onions
-1kg tomatoes
-5 tbsp tomato paste
- Biriani masala, curry powder &coriander
-potatoes
-yellow & red food colouring
- basmati rice
