Simple progressions are great, but you know what's even better? Adding weird chords to them! But how do you do that without losing the underlying structure of the progression? That's where chord substitutions come in. There's lots of different approaches, from slight alterations to complete re-imaginings of the harmonic landscape, but they all help you add a little bit of extra spice when your harmony is getting stale.
