You and Babatunde finding each other has led to one of the most wholesome, entertaining, and enlightening collaborations in RU-vid history. Thru you, I have discovered Babatunde, and his outlook, enthusiasm for cooking, and almost childlike joy in the simple things in life is a breath of fresh air in this day and age. Tapioca flour and corn starch are great gluten free alternatives as well. My husband has made his own blend of buckwheat, rice flour and cornstarch which he uses for pancakes, waffles, cake, etc.

My family knows I watch all your vids. My 13 yo son heard your voice and asked what you were doing today, i said "Rubbing beans to make donuts" i thought he was going to laugh himself to death! It was nice to sit and watch this together though. 😂

Adding a little baking soda (sodium bicarbonate) helps the skins separate more easily, in the same way that lye softens the outer layer of field corn to make masa for tortillas and tamales.

There is a savoury Ukrainian dish somewhat like a pasty called Pirozhok, however the dough of that also tastes like doughnut dough. It's the new series no one asked for - savoury dishes that taste like doughnuts!

After deep frying, set them on a wire rack to let the excess oil drip below. They will be crispier this way than in direct contact with paper towel (or another fritter) that keeps the moisture in to steam the crispy coating leaving it soft. I only recently learned this. I always add salt to my sweets too. 😊👍

My mom makes these all the time, but I never liked them growing up. She made them with black eye peas. I’d probably like them now, but I never really gave them a shot. This might make me try them out again.

When living in Europe, my son's teacher would pick a country and they would study it for a couple weeks and then we would make a dish from there. I did these using black eyed peas. The kids loved them.

Hello. Are we allowed another video where dice rolls stipulate the ingredients that you're allowed to use? I love all your food videos! 🙂 xx Or do you think you could do a couple of days where you can only make meals from ingredients that are one colour (one colour for day 1 and another for day 2?) Japanese mochi balls are made from cooked, ground and kneaded rice, often with a filling of sweet red bean paste. Red bean paste is used for many sweet dishes in japan so i would think most beans could be made into a desert 🙂

Mentioning this whilst still watching lest i forget: if you use chickpeas next time for w/e - also remove their husks like this: hummus for instance becomes amazingly smooth and silky if you do! They are fairly easy to remove if you soak them in a bit of salt water, then rub them dry in a kitchen towel. Still a bit of work but i feel it's totally worth it, especially if you do a bigger batch :)

As a Nigerian, I'm actually glad to see my traditional dish gaining attention of people from different parts of the world, and I don't really mind you making your experiments to see what magic you can make out if it. I'm definitely going to try making the sweet akara, but I won't go all out with the sugar as you did.

The sweet/savoury comparison reminds me of a few years ago, when I was an EU citizen, and most Friday evenings on the way home from work I would visit the KLM Crowne Lounge at Schiphol. They did the most wonderful savoury doughnuts - coated in salt rather than sugar, and a cream cheese filling (possibly Boursin) rather than Jam.

Use soybeans and you can have tofu, the whey for soup stock AND akara . To make akara use the ground soybeans you have left from the grinding to make the milk for the tofu. put parchment paper on a cookie sheet and spread the soybean 'grounds' on it, put it in a 275 degree oven until it is dry stir often. You can use this as a meat substitute. Best tho when mixed with ground beef or turkey or chicken. You can buy 50# of whole soybeans for animal feed pretty darn cheap. Never buy SEED as it is inoculated with chemicals . I ate plenty of this stuff when funds were very tight. I no longer make use of soybeans because no need to be really really thrifty. It is amazing how much food you can get from that 50# bag.

Certainly more nutritious than donuts!!!! Will definitely try this! Could be served with a dab of apple purée. They sound lovely and crunchy!

Atomic Shrimp, considering your name, it would be fitting for you to try the Brazilian version of acará. We eat it with a bread and shrimp porridge called Vatapá, cooked shrimps, and sometimes a vinagrette and an Okra salada called caruru.

I've heard you can even make chocolate truffles with cooked white beans, if they're blended and mixed with cacao powder and vanilla... I never tried it, though

Because usually, white beans never survive that long in my house, because they are very quickly drained, mixed with diced red onion, oil, salt, chili flakes and dill. And soon as the flavors mixed and came to know each other, I have to eradicate this bean salad immediately! 😋

@@tillievantonder That sounds delicious! Germany has a strange relationship with beans, I believe. While Mr. Mike can buy a can of baked beans for 22p in the UK, we have to pay 5 times of the amount in the UK, and that's for a store brand. We seem to eat more string beans over here. Chili beans are already exotic, and black beans? Well, I have actually never seen them being sold anywhere! Can these brownies be done with kidney beans or cannolini beans, too? 🤔 Or would I then fabricate gingers or blondies? 😉

Actually, truffles made of mashed boiled potato, butter, cocoa, sugar and maybe a bit of brandy are really delicious (and no one would guess they are made of potato). Cooked beans are probably something very similar, ie starchy base.

Why people still remove the bean skin, is due to that traditionally, Akara was turned into puree in a big wooden mortar (how I regret not buying one), then the skins remain almost intact if you leave them on, a blender choppes them up. That's why I don't bother. And you should have used coconut oil and like bananas or mangos instead and maybe some shredded coconut, to make it more African. Just a thought. I will never forget my coconut palm tree right outside my door that constantly tried to kill me. Thank god for the natives that saved this idiot toubab by climbing up and chopping the nuts off.

This reminds me of the bean based buns they serve with shrimps (minus the sweet of course) in brazil called Acarajé... must have been brought over by slaves. They fry it in palm oil, giving it a reddish brown colour

I’ll be honest here, I prefer Babatunde doing our recipes. He really struggles to get equivalent ingredients whereas we (including you) have access to a far wider range of ingredients and global produce. In my culture we eat boiled seasoned green peanuts. I would make them whenever I visited my sister since her little girls loved them and once when I arrived, my oldest niece said "please make the beans!" because she thought the boiled peanuts were beans (technically they are of course). I had thought that they reminded me of spicy pintos or kidney beans but it was fun to see where her mind took her when eating boiled peanuts.

Try replacing sugar with brown sugar or for best result use Jaggery + freshly ground cardomen instead of sugar + nutmeg

Great to find something new that's gluten free. It can get very frustrating trying to find something on a menu in a coffee shop when the staff are untrained for gluten free ingredients. Recently asked for a gluten free salad in a coffee shop, they served me a plate of shrubbery, green lettuce and peas, nothing else!!! 😭 More gluten free pleeeeeeeze!!!

Hi Shrimp! Long time watcher, first time commenter. I could see this recipe benefiting from some more cultural influences - in East Asia, they use sweet red bean paste in similar recipes (check out Dorayaki). I wonder if this recipe would benefit from a red bean variety?

I was right to assume that these would work. Many eastern dishes include sweet bean paste as an ingredient, no surprise that a bean paste donut would be good.
