Sweet Pillows of Perfection: Divinity Fudge

Yum, Yum, Yum....This recipe is like eating a little piece of heaven!! I love Divinity Fudge but I usually have a hard time making it. This time is different...This time it will turn out and I am going to show you how I make this yummy little treat.
Ingredients:
1/2 cup of water
2 cups of white sugar
1 tsp of vanilla
1 jar of Fluff or marshmallow crème (7 to 7.5 oz)
Candy Thermometer or digital one
Directions:
1. Put your jar of fluff and 1 tsp of vanilla in a bowl and set it aside to be whipped later
2. Put your 2 cups of sugar and 1/2 cup of water into a pot. Mix and bring to a rolling boil over a low to medium heat. Stir often so it doesn't burn
3. While your water/sugar mixture is boiling start whipping your fluff, only about 2-3 minutes
4. Using your thermometer, check your water/sugar mixture. The temperature should be at 240℉ or 116℃
5. Once you reach the correct temperature, remove it from the heat and put it in a measuring cup to pour it into your fluff mixture
6. While your fluff is mixing, slowly pour the water/sugar mixture into it and mix on high until well combined and starts to thicken
7. Let your mixture cool until it's a consistency that you can put spoonfuls of it on to a baking sheet lined with wax paper or parchment paper
8. Set in the fridge for 30 minutes to an hour to set
9. Once set, remove from the fridge and enjoy

Every once in a while, Charles Schulz would mention divinity in his "Peanuts" comic strip. I never knew what it was. It sounds incredibly sweet, but I probably would have loved it when I was a kid.

I learned long ago to bake a yellow cake in a 9x13 pan and set it aside if your candy doesn't set spread it on the cake and top it off with flaked coconut. Atlest you have a dessert.

Thank you for your kind words. You melted my heart this morning and put a smile on my face. I do these videos to inspire and for the happiness it brings me when I cook and bake. I love the way food brings people together too. I had this fudge (made by Natalka!) and all I have to say is… make it! The texture is so unique and it was so good.

My mom made the best divinity in the world, it was called twice cooked divinity. She spread it into a 11×13 buttered pan, let it set, and cut it just like fudge. You can not make it on a high humidity day, it will not turn out.

It's crazy how much humidity affects how things turn out when baking. Sometimes it's frustrating, but when things turn out like divinity, they are amazing. I love that your mom put it in a large pan and cut it like fudge!!! Growing up, we always considered divinity to be fudge so cutting it the same way makes sense! It was invented in my home state of Massachusetts. Meet me at one time I don't think it was as widespread as it is now. Any stores in Massachusetts I've been to carry both fluff and marshmallow cream.

Yes, I use homemade vanilla. It's sooooo easy to make. Just cut up some vanilla beans and put them in a jar filled with vodka, and let it sit in a cupboard for a few months!

Don't worry that they didn't turn out. Mine do not turn out every time I make them. This is one of my love hate recipes. I love it when they turn out and hate the recipe when they don't. I thought Divinity was made with egg whites?

Yes, the traditional recipe is made with egg whites. I make mine with Fluff because that is how I learned how to make it. It's a different way of making it.

You need a STRONG electric mixer, and a dry day. Humid weather or feeble mixer motot will leave you with something resembling silly putty - tasty but not the fluffy cloud you thought you were making.
