Sweet Potato Honey 🍯 Bun Cake:
1 Box Yellow Cake Mix
1/2 Cup Vegetable Oil
4 Eggs
1/2 Cup Sour Cream
3/4 Cups Sweet Potatoes
2 Teaspoons Vanilla
2 1/2 Teaspoons Pumpkin Pie Spice
3/4 Cups Brown Sugar, packed
1 Teaspoon Cinnamon
1/2 Cup Chopped Walnuts
Glaze:
2 1/2 Cups Powdered Sugar
2 Teaspoons Vanilla
7 Tablespoons Milk
Heat oven to 350 degrees F. Spray the bottom and sides of a 9X13 inch baking dish with Pam Cooking Spray.
Place cake mix, oil, eggs, sour cream, sweet potatoes and pumpkin pie spice in a large bowl. Mix together for about 2 minutes until ingredients are just incorporated. Measure out 2 cups of the batter and place in the bottom of the baking dish spreading evenly.
In a small bowl combine brown sugar cinnamon and walnuts. Toss together to combine. Sprinkle half of the mixture over the cake batter. Spread the remaining cake batter over the filling using a rubber spatula. Spread the remaining brown sugar mixture over the second layer evenly. Place in the oven and bake for 35 to 40 minutes or until a toothpick inserted comes out clean.
Mix together the powdered sugar, vanilla and milk, pour over warm cake.
Serve warm or let cool completely. Enjoy!
