Ingredients for one 9 x 5 inch loaf pan
120 g Japanese sweet potatoes (diced) - about 2/3 cup - one small size
4 large (210-215 g) eggs
1 cup (200 g) sugar
3 oz (85 g) unsalted melted butter
1 2/3 cups (225 g) cake flour (or all-purpose flour for substitute)
2 teaspoons (8 g) baking powder
1/8 teaspoon (1 g) salt
1/2 cup (120ml/ 4 oz) milk
1 tablespoon (10 g) black sesame seeds
1. Wash, peel, and dice a small potato and microwave for 2-3 min. Stir at 1 min intervals to make sure they are cooked. Potatoes will shrink to about 100 g after cooked. Let it cool down.
2. In a bowl, add eggs, sugar, and melted butter. Whisk until combined.
3. Sift in the dry ingredients (flour, baking powder, salt) and whisk until half blended. Add milk and whisk until blended.
4. Fold sesame seeds into the batter.
5. Grease the loaf pan. Transfer half of the batter to the pan and top with half of the potatoes. Transfer the rest of the batter and top with remaining potatoes.
6. Bake in preheated oven at 350°F for a total of 50-55 minutes. If it is still uncooked after 50 minutes, loosely cover the top of the cake with aluminum foil to prevent burning. The cake is fully cooked when a toothpick inserted comes out clean. The cake will be brown at all sides and it smells delicious.
7. Transfer to cooling rack to cool down.
8. Serve and enjoy!
