Ingredients:
Shortbread cookie crust:
1 cup (2 sticks) butter
1/2 cup sugar
2 cups flour
1 teaspoon vanilla (optional)
3/4 cup macadamia nuts
pinch of salt
Pie filling:
two large sweet potatoes
1/2 cup butter (or coconut oil)
1 teaspoon vanilla
2 eggs
1/2 cup milk (or coconut milk or other milk)
1 cup sugar (or 3/4 cup honey)
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
