When I think of America, one of the first things I think about is the food. Especially around the holidays! This dish reminds me of when I immigrated to America 25 years ago, and experienced my first Thanksgiving. We never celebrated Thanksgiving growing up in Austria and it became one of my favorite holidays ever. I love how everything slows down Thanksgiving week, I also love that you get to really be surrounded by family and friends and just enjoy cooking and eating. Today I am sharing one of my favorite side dishes with you all - Sweet Potato with Marshmallows! Thanksgiving food is a whole special category of it’s own, and this is one of my favorites.

Recipe:
8 large sweet potatoes
6 tablespoons of unsalted butter
1/2 cup packed light brown sugar
1/2 teaspoon of salt
3 tablespoons of maple syrup
cinnamon
nutmeg
1 bag of large marshmallows
Prick sweet potatoes with a fork, and bake about 45 to 1 hour, let cool slightly on a rack.
Scoop out flesh into food processor, stir in all the ingredients and mix well.
Bake in oven for 20 min at 350
I add the marshmallows and broil on high for 3 to 4 min at the end before serving.
