We've been using this fryer for about a year and really like it. Really good tip here to put the fryer on a sheet pan and then on your stove under the exhaust fan. One other thing that might save you some clean up is that when you want to move the fryer, if you've already drained the oil, remove the oil container from the machine and move it separately. If you leave it in the fryer and don't keep the whole thing completely level, oil will leak from the oil container and you might end up with a series of oil drips across your floor. Don't ask me how I know.

In the UK, the Fish and Chip shops pretty much all do the two-stage frying method. They simply have two commercial deep-fryers setup at different temps and move the basket straight from one to the other. However, there is a serious issue with this procedure. Tests have shown that the chip absorb about 30% of their own weight in oil during the lower-temp fry, and if only fried at the higher temp the absorption is only around 10%. So many restaurants and institutions now use a different method. They either part-boil the chips, or they steam them for 10 minutes, then do the high-temp fry. The result is just as good, and a great deal healthier.

I have almost the exact same unit, but co-branded with Emeril, and mine has digital temp control instead of a knob (but still only goes up to 374f). I just wanted to point out that a neat feature of the automatical filtration is you don't have to wait for it to cool down. There's a temperature controlled mechanism that prevents the oil from draining until it cools enough. So you can just fry, turn it off, flip the switch to FILTER, and clean the machine in the morning.

We just bought one of these about a month ago and have used it three times so far. We found that, after cooking, you can immediately put it on the drain setting, and the oil will not drain until the oil cools down - usually 1-2 hours after cooking. The unit can be unplugged during the cooling process. We reused the oil three times before discarding it.

They are thinner than steak fries, so I guess a lower temperature makes sense for blanching. Where would this be on the temperature marker? You need a private stash of paper towels that she can't find!

I use mine primarily for fries to go along with steaks and burgers. You can cook chicken, doughnuts, fish...lots of stuff. If you cook onion rings or fish, you should keep that oil separate, else everything else you cook could have an off-flavor. Unless you like fishy doughnuts! I will put other foods on the proverbial UPCOMING VIDEO LIST. :)

Thank you. Actually my wife designed most of it, but I did pay for half!

I like that I can "fry" something on a whim! An oil fryer takes so much more time to clean and prepare ru-vid.comUgkxD4Qeo-HRLxMfom_PDinM_SBfes00qJsB a chore which usually kept me from frying all together. Also, the lack of needing oil to fry means that my family and I are eating healthier... while still enjoying the crispiness of fried foods.

We have pig lard. It solidifies. Can it be used for the fries? Maybe after filtering pour it into a different container to store? It's not going to pour our of the storage container.

I had the previous version of this frier lacking the oil filter and storage. This is a big improvement as draining and cleaning the oil was a pain. My other point was that it felt like it lacked capacity. I ended up chucking it for frying in the dutch oven since it felt like it could only cook fries for one and even less fried chicken. Fried chicken batter would foul up the oil with batter bits and coat the basket. For me it was easier to make Korean Fried Chicken(yum!) in a dutch oven on an electric stove since they use a thermostat and seem to maintain oil temps better (than gas, one of the few positives of electric stoves) by having a vessel that retains heat energy and a larger capacity of oil so the oil temps dont drop as badly when food in put in. Regardless I like your show. Another guy who loves food and cooking, my kind of guy.

All good comments. I think on gas, the temp just keeps going up and up so you have to keep an eye on it and adjust. I used to cook fries in my dutch oven on gas, but I had some trouble with the oil overflowing once the fries got in it, so the dedicated fryer kind of keeps me out of trouble. Thanks for watching the show!
