Check out the "Birdy" strainer. That's the 2nd function of that particular strainer, aside from straining 👍

He used a hawthorne strainer that has depressed concave surface to separate egg whites and yolk; he then placed a coil inside to dry shake egg whites! Coil gives efficient and effective texture to egg whites by giving a shake gently (could adjust / control to make the texture of egg whites frothy, soft, or stiff easily).

I think there are different styles for everyone who likes to drink. Kind of like people who prefer typical local diner food, compared to immaculately prepared small bites at a fine dining restaurant. Both are good! Depends on what you are in the mood for.

There are just different styles, Japanese bartenders are usually going for an elegant style, Tipsy Bartender is more like going for a party drink style, to each their own
