What percentage of the castle would you say is original and then the 800 yr old section..and how much is actually just fabricated to appear old ?

The castle buildings have been added to over time so it started as a wooden motte and bailey and became stone later on. So there are norman buildings, medieval, tudor, victorian and 20th century additions. The viking mead hall is the newest addition.
