Sheep offal haggis is a copy of the real haggis. I prefer the taste of genuine wild haggis. A lot of haggis are farmed but loose some the flavour. Haggis from lowland Scotland have all four legs of equal length. Highland haggis have legs that are slightly short on one side of the body. This enables them to run round a mountain and remain upright. However if you drive a haggis so that it runs round the mountain the wrong way, it will topple over. You can use this phenomenon to catch haggis. Wild haggis are nearly extinct in Scotland, so some estates are breeding them in captivity and releasing them into the wild.

Haggis filled Pirogi was the 1st thing that came to mind as soon as you mentioned that your wife was 1/2 Scottish & 1/2 Polish. I say give it a try🥟🥟🥟

I've been to the Scottish Gourmet in Greensboro a few times, they have many Scottish food products, in addition to haggis!

Pasties in England, particularly Cornish was to package the meat and or veg warm and clean. Away from coal ust nd dirt and was primarily a container /wrapper. It was never ate.

Best haggis I ever had was in a small inn in Dumfries. Cook was listening to Dean Martin and cooking up a storm. Haggis was very tasty and full of flavor without being soft hot. I dream of having that haggis again.

We have something similar in Sweden called ”pölsa”, made from beef and pork (offal). 🇸🇪 We also have ”blodpudding” (blood pudding ), similar to black pudding.

The haggis sauce from scottish gourmet has red currants, horse radish and scotch whiskey. It's sweet and spicy and pairs well with their haggis.

Tastes fantastic with a creamed onion sauce! Cleanse your pallet with a Drambuie sorbet after, then go on to the next course. Beautiful haggis made near or in a Aberfeldy Scotland, and served at the Breadalbane Arms at one time.

I'll have to try the onion sauce next time I have haggis! I usually do a black pepper sauce with mine, but onion sounds like it would work well.

The origins of Pasties was wives of miners would make them for their husbands and the crust on the edge was just a way to hold it due to the toxicity of what they were mining.

Correct.. In Cornwall it was generally Tin mines, and the rock that contains Tin, also contains / can contain quite high quantities of Arsenic.

Good stuff. Unfortunately when you are in the middle of the States the shipping of the Haggis from either coast is usually 3 times the cost of the product. Funny thing back home the Pa Dutch around Reading/ Lancaster/ Intercourse, Pa. eat lots of stuffed pigs' stomach but most think the idea of Haggis is weird.

While I appreciate the piping and the recitation of the Ode, it's really more of a Burns Night tradition. Like many other delicacies, it's poor people's food and doesn't require all the pomp and circumstance. You did make an honest go of it, though, so I commend you. As to the suggestions on methods of preparation: Haggis croquettes with an Irn-Bru reduction are rather nice. Haggis pierogi would be interesting as would haggis gołąbki (I've been wanting to try doing some corned beef gołąbki for Paddy's Day for quite some time now). And another tasty idea is to wrap the haggis in dough (I used Pillsbury crescent dough) and bake it. This is especially nice with Rabbie's Haggis Sauce. 😋

The best haggis is made in Northern Ireland just up the road from me in Belfast. It won the award for a few years in a row. The best battered haggis is from a fish and chip shop in Larne . In Shotts Scotland they do my favourite haggis pies and curry haggis . As well as the best Scots pies. Well I do eat haggis at least twice a month you can get it all year round even in the super market and in tins Swede's is neeps but you can use turnip

scottish gourmet offers a haggis sauce. I believe it contains red currants and horseradish among other spices. it's quite good.

I heard that it is illegal to cook haggis in the U.S. I ate haggis 5 times while visiting Scotland August 2023! It's awesome.

Shaun, the Scottish Ambassador to the world, did a 24 hour haggis challenge in 2018, eating haggis for breakfast, dinner, supper, and then breakfast again. He didn't always use the traditional form of haggis (a haggis roll with bacon for breakfast, for instance), but really, he's from Edinburgh so you just gotta roll with it. I think my mother in law made a haggis once. She claimed it was a roast turkey, but I seriously doubt it. She didn't serve it with whiskey, so we had copious amounts of beer to wash it down, which barely sufficed, I'm sad to say. Anyway, it looked a lot like the haggis in this video, but I secretly thought it was actually road kill.

Gods food when made properly. That looks nothing like our Scottish ones. The colour is totally different. Neeps(turnips) mashed or chopped potatoes. I personally pour a bit of whisky into the haggis when it’s burst 😊

OFF TOPIC QUESTION.... My clan is Lindsay... is it permissible to make a tartan flag, or cup or anything else, but using Lindsey on the flag. ie Clan Lindsey instead of Clan Lindsay.... just wanting to know since lindsey is an accepted spelling, if i can say clan Lindsey as my last name is, vs using clan Lindsay. (hope to see you guys in Penn at your fest.... Love the show.

Eric, nice try but remember that the Scots roll their rrs ant the ch pronounced more like tch ( as Germans do). The second word fa' say as fay. Your pronunciation was very similar to what sassenachs say and Rocky before you drink, slàinte.

Fairly ambivalent towards haggis myself. Never ever had trouble eating it, unlike some people who balk at the idea of the offal. But I always found it a bit stodgy and dependent on the spicing to not be bland. It's _much_ better than white/mealy pudding which doesn't even have the variety of spices or the meatiness of haggis, but if I were to nominate a true chieftain o' the puddin race, it'd be black pudding, hands down. Black pudding, especially when made with barley groats instead of oat groats. Love blood, love suet, love barley. I've got to say, the inclusion of neeps in haggis, neeps & tatties is a more successful usage of a food that you wouldn't usually eat, than brussel sprouts with Christmas dinner. I still avoid sprouts, but nevertheless fool myself into thinking I enjoy neeps. Good call on whisky too, I agree that Laphroaig and other Islays are probably too strong for haggis and would also opt for a Highland malt instead.

Blundering Task. May I suggest this to make the haggis experience one of the world's culinary masterpieces? Which it most certainly is, but requires the correct preparation, with no diversions or compromise. Head for the Highlands in winter, with one or two dogs, alone or with specifically good company, NOT the wife, or anyone likely to complain of discomfort. Pick a cold, wet, preferably snowy day, wrap yourself up snug and warm, wear tweed plus fours or a heavy weight kilt, good walking boots, a deerstalker or similar, flask of coffee and a stick. Afore you go, place a large haggis (only a good one like Sheridan's from Ballater, Deeside) in a large oval pan, together with big, chunky cut tats and neeps, just cover with water, bring gently to the boil, tuck in some parsley, stalks an' all (if available), turn down immediately to the lowest setting, cover, let it simmer and do the work. Use a large slow cooker if you have one to save the gas blowing out unexpectedly! Return many hours later with the dogs from walking up a munro or two, alternatively a large loch, cold, wet, tired and possibly miserable, but RAVENOUS! (this is of the utmost essence, to be very hungry indeed). The piquant cooking that greets you will restore the spirit, stir the appetite and satisfy the stomach like none other. Place the food in large bowls, piping hot, using the cooking water (now thickened and turned into a stock-add flour/granules if necessary), for gravy. Grab the whisky bottle and don't hold back, a good blended one will suffice like Whyte & Mackay, eat like you've never eat before, throwing the remains to the deserving dogs. This is the only way to fully appreciate this classic dish.

@@maxwellfan55 Some good advice there. I don't have to go very far to reach the Highlands - I'm already here! Born in Inverness, live on the Black Isle. I agree there's nothing quite like a long, scenic walk with the dug. Alas, we don't currently have one at this time. I miss having canine companions and look forward to the day I am able to justify getting another. I definitely agree that the quality of the haggis varies greatly between each shop and butcher, and will definitely think of being more adventurous with seasonings and garnishes as you recommended. I know this is sacrilege, but having boiled and cut open the haggis, I do like to spread it out on a baking tray and blast it under the grill to create some crispy bits to help cut through the stodge. That's perhaps one of the biggest differences between haggis and black pudding - haggis is customarily boiled, whereas with black pudding, the option to slice it (hence creating more surface area), and either fry it or grill it (crisping up said surface area), is one of its strengths.

@@rabbitspliff Interesting! Fast grilling spread out after a long simmer is worth a try, I think I'd like that very much. In fact I think it a brilliant idea. I have three Burns engagements this year, spread over three days, I think possible to get haggis overload so this might be suggested to the chef (if he ain't too stressed out!).

Most of the UK ones don't have a natural stomach as the skin, not much point really as you don't eat it anyway. I doubt that this American one has a natural case either!

No, sadly it's not. It's what our government will allow us to have. It has to be USDA approved to be allowed entry into the U.S. I for one would rather have the authentic Scottish Haggis. This is just another example of "If it's not Scottish, it's CRAP!" Well, guess what! :(
