Ingredients:
• 2 zucchini
• 2 onions
• 1 bell pepper
• 6-7 small mushrooms
• Olive oil
• 50-100 ml milk (50-100 ml milk / 1/4-1/2 cup milk)
• 2 eggs
• 3-4 tbsp flour
• 100 g cheese (100 g cheese / 3.5 oz cheese)
• Tomato sauce
• Salt
• Oregano
• Smoked paprika
• Black pepper
Preparation:
1. Grate the zucchini and mix with salt. Leave to stand for 10-15 minutes.
2. Finely chop the onions, peppers and mushrooms.
3. Heat olive oil in a pan and fry onions until soft.
4. Add mushrooms and fry until liquid evaporates.
5. Add bell pepper and cook for another 2-3 minutes.
6. Add tomato sauce and spices, mix well and simmer for 5 minutes. Set pan aside.
7. Squeeze excess water from zucchini.
8. In a bowl, mix eggs, milk and flour well.
9. Add mixture to zucchini and mix well.
10. Grease a baking pan and spread zucchini mixture in a thin layer.
11. Add mushroom mixture as the next layer, then zucchini again.
12. Bake at 180°C (350°F) for about 25-30 minutes.
13. Grate cheese and sprinkle over casserole, bake for another 5 minutes.
