Mrs. Komal Prabhu presides over the kitchens at her 20-year-old Maharaja restaurant in Mangalore, where in addition to dishing out popular fare like the ghee roast etc., she also presents preparations from her GSB (Goud Saraswat Brahmin) culinary heritage. During my last trip to Mangalore, I caught up with this affable restaurateur while she introduced me to the making of her style of the chicken ghee roast, and a rather unique dish, the boothai (sardine) nippat.
