Tea brewing methods that I personally use or know. In this video we will take a look at some of the different brewing methods / techniques that there are.
- Western style brewing. In this method we primarily use a teabag or some sort of filter. Tips are to pre heat your cup, buy organic tea or buy quality loose leaves.
- Grandpa style. In this method we use loose leaf tea and put it in a mug. We drink the tea until half way and then fill up the mug again. Tea that floats or has small bits in it is not suited.
- Leaves in a bowl. In this method we use a bowl and add leaves. Now we drink our bowl fully and then add hot water. Tea that floats or has small bits is not suited.
- Sidehandle tea. Now we use a sidehandle teapot and bowl(s). We now can use all types of tea.
- Boiled tea. We use a sidehandle or other brewing vessel that can handle boiling and boil the tea for some time. Teas that are great to boil are Shou puer, Liu Bao, some white teas and some red teas.
- Gong fu tea. Uses smaller cups and pots to get the best out of the tea. Can use most teas.
- Whisked tea. Uses powdered tea and whisk it to make bubbles!

My two favorite ways are whisked and gong fu. Matcha is my absolute favorite tea but I can't afford to keep it very much. Even then, as a stay at home parent of a four year old and a nine month old, I don't often have time for gong fu style. My go to method is to boil water, pour it into my enameled tetsubin, let it cool for 10-15 minutes, then steep tea for 3 minutes. This way, my teapot is warmed and my water isn't too hot.

Any suggestions on how to brew C edulis tea And are fresh leaves better than dried ones?

Tip for tea bags - they need agitation to work. That bag needs to do flips or twists as you pour the water into the cup. If you've filled the cup and only have a couples wisps of colour coming from the bag, then your tea won't be very good. Stirring or leaving it a long time can make some recovery, but it's far from ideal. Tea bags were invented for black tea - and so assumes a 'rolling boil' water that's got lots of big bubbles and movement and currents even before you pour it (this is why heating water up for tea in the microwave is something Brits flinch at - it doesn't matter if you get the right temp if it is still as a pond). The lower temps and less bubbles wanted for green tea just won't work well with bags.
