They will be less tender, but you could tenderize before curing or increase the cure time a bit to help with that.

In your calculation 3600 x 0.0275 = 99, the mix would be 2.678% salt. For the mixture to be 2.75% salt you would need to add 101.8g of salt ( (3600 x 0.0275) / (1 - 0.0275) ) Doesn't matter, but I know you're careful with cures
