This is my family’s recipe for braised meat in soy sauce or literally called Lou Bak 滷肉 or Tau Yew Bak 豆油肉. It is one of the many dishes that my late mum had prepared which we have missed so much until today. The meat was always tender and juicy. The taste for this braised meat is simply addictive as it is filled with an intensely flavourful sauce that was only possible with a good quality soy sauce, which to my mum, is a MUST have for this delectable dish. Also, hard-boiled eggs and tofu were always added for a more complete meal.
Braised with a variety of aromatic spices, this fragrant soy gravy is known as Lou 滷. The gravy is just so unbelievably good with a warm bowl of steamed rice. In many teochew families, this braised meat dish is usually served with plain rice porridge (commonly known as Teochew Porridge). Another great way to enjoy this dish is to eat it with steamed buns or mantou. You’ll simply never get enough of this aromatic soy gravy!

So delicious!! I made it and it was perfect, just like how my mom makes it. During the caramelization part I did add shallots, ginger and garlic to make it more fragrant and I also added a bit of MSG. Otherwise really amazing recipe

This is ur new version of LA BAK, old version much more better taste, although much difficult and this version less ingredients.

Hi Huang, I tried this receipe, reduced the quantity of spices by half n using shoulder butt instead. My family love it. Taste good. I find that the meat is too much fat for my liking, can we use twee bak instead ?

You can keep in the freezer to preserve the freshness. A few days a head should be ok

Hi Huang, love your recipes. Just curious, are you using a stainless steel wok? I am thinking of investing in a wok and would like to know if a stainless steel wok would still give you the "Wok Hei" as compared to a carbon steel or cast iron wok.

+Bee Bee Ang Thanks for your comment. Yes, I do use stainless steel wok but I believe the cast iron or steel wok will do a better job when we want "wok hei" in our food. To get the "wok hei" flavor, we need to first heat the wok over high heat until it smokes. And iron or steel are more suitable for very high heat cooking. However, cast iron wok will tend to rust so it needs to be maintained well, Hope this helps. Enjoy!

You can try the LEE Kum Kee Premium Dark Soy Sauce or the Pearl River Bridge brand of Superior dark soy sauce.
