I’ve been watching Phyliss for a couple hours! I guess I’m having a hard time letting go! I’m feeling emotional about her being gone, it is getting difficult lately to loose people I know and Phyliss whom I felt like I knew! If others are feeling her loss, I’m not surprised! I always want to comment on her videos even though she is gone. I am so very sad. She and Mr Bucky had such plans for building their mountain home. Unfortunately I started watching her videos just around a year before her illness, Mr Bucky's passing and then hers. My heart just broke for her when he died. My little cat, Timothy Thomas just passed away Wednesday late night so I'm still a little more emotional about things. I apologize for that.
Stevan, thank you for helping all of your mom''s followers grieve along with you. She is so serene and calming and you can feel the angel heart come through when she is speaking. I'm trying very hard to get all her recipes copied! I had just started following her before we lost her. I especially enjoyed your tales of living in Edmonton and felt an automatic kinship as well as pity, as I live in Calgary and know about the cold! God bless your mission in helping us all.
I found Phyliss shortly before she passed. Of course I didn't know she was i'll. One of her videos was recommended, i'm so glad. I just love her and enjoy so much watching her cook.

I understand and agree with everyone, but I differ too. I am so grateful to Stephen for keeping her RU-vid up and going and continuing in her legacy. STEPHEN, THANK YOU! 🙏❤🙏 So due to this, we still have these videos and can keep finding Miss Phyllis' great recipes! I don't look as Miss Phyllis and Mr. Bucky as truly away from us. They are still existing, a different form, as they only shed the physical. This physical for all of us is very temporal. I will continue to forever love watching the both of them. I so dearly love how many lifes that this precious couple have touched, influenced and made us all feel like we're family. That is a gift! That IS a gift! Present tense was not an error on my part. It is meant. They continue this gift now and still will. Knowing my experiences, plus my beliefs and of how life is like a vapor, I personally do and prefer to think and speak of those on the other side, being in the present tense. This has been a practice of mine for nearly 25 years. It addresses what is real. There's no duality stance, so my words speaks the truth of my beliefs, we continue.

I have been watching her for a couple of years. Always loved her soothing voice and the soothing way she cooked. I was able to turn off the turmoil in my life for a little while. She is missed.
I've been watching her videos past few days. I really miss her! Just loved Mrs. Stokes and Mr. Bucky! She's so comforting when you've had a bad day or feel lonely.
I finally subscribed to your cooking channel. I have been watching your videos, old, new and in between. The problem I find with your videos is...they keeps me up way too late. You cook like my mother did and even remind me of her. Keep on cooking!

Hi Ms. Phyliss! I *LOVE* a good casserole! Nothing like them...like a great pair of "broken in" jeans or shoes, they offer pure comfort! Not too many folks are making them anymore (shame)...I still buy casserole dishes, especially individual ones...FIESTA WARE has some nice ones...perfect time of the year to order one, or maybe two as the season is about to change...casserole weather is on the way y'all, yippeeee!!!

When she posted this- I made it. It was such a hit with my husband and son, I not only made one two days later but an extra one for my husband to take into work. He told me when he came home with clean dish it was the first to go. Many were asking for recipe.
Dearest Mrs. Stokes, I made this casserole last night and baked it this afternoon for our lunch,it was delicious. Thank you for your recipes and videos. My hubby loves leftover and takes him to work at night so he can get a hot meal when he gets a chance. He always takes extra to share with maybe a single guy or gal that forgot their lunch or maybe a little short and he feeds them. This casserole they’re gonna like very much. Thank you again.
I love recipes like this that you can easily adapt and change to personal tastes ... if you ever have problems grating softer cheeses I find putting them in the freezer for about 20 min. beforehand really helps.
I love this woman! Everything she cooks are the meals I have served my family for years. I just would like anyone who watches her if they know if she is well. She often looks so tired and can barely speak. Please let me know.
Made this for dinner tonight with a couple of tweaks, rotel tomatoes w/green chilis and some cumin, salt, pepper and a few dashes of taco seasoning. It was delicious! Also made your 1950's Jello using cherry lemonade jello and some frozen cherries. I have to say never was a jello fan but with the cream cheese it's so smooth and yummy! Thanks for 2 great recipes Miss Phyllis!!
I'm on video 66 of my 200 marathon and how can I stop. I am a Tex Mex girl. O I love it. My list of things to cook on that Debbie Do List 2020 is longer and longer. We are going to be very happy, and well fed. Yum.

They make me laugh and I wanted to tell you that I enjoy them so much!! You two are the real deal!! This Tex/Mex Casserole sounds really good. I admire you so much as a person, teacher, & an all around amazing woman. I love the way you tell us about your mother, grandmother, greatgrandmother & your family in general. I was born in 1953, so I can relate to many things you talk about. I so miss those days when life was not crazy chaotic, much simpler, manners & respecting your elders was just what you did because you loved them & were taught to not sass, argue, with your parents that actually did know more than you. You're an organized,, meticulous, entertaining,ly, awesome frugal cook which takes alot of planning, HARD WORK, and a vast intellect. And i will never forget all the rescue animals you have taken into your home & heart. You have taught them what loving kindness is. Teaching them how to inteact with other kinds of animals which in turn are great survival skills if or when they are adopted into others homes. I made this for my husband and I tonight! I didn't follow the recipe to the letter as I made the following changes. Instead of Monteray Jack cheese, I used extra sharp white cheddar cheese and a pouch of orange shredded cheddar cheese. I also found a can of mini diced tomatoes that had chilies in it instead of buying a jar of jalapeno peppers. I also sprayed the tortillas with butter cooking spray instead of spreading melted butter on them. I don't have a brush for butter right now. It was easier just to spray them. I also didn't have fresh cilantro or garlic so I used about a teaspoon of dehydrated garlic flakes and about half a tablespoon of dried cilantro. We both loved the results very much and plan to make it again! Thank you for a great recipe!

I froze the casserole in serving size pieces, this way you only need to take out what you need plus a single piece thaws quicker than the whole casserole.
Here’s a tip I’ve learned concerning your Monterrey Jack cheese, if you half freeze it, it shreds amazingly bc it holds up better. 🤷♀️ I’m making this tonight for tomorrow, I think my family will love this, TYFS❣️
This recipe is similar to my Mexican lasagna recipe. The difference is I use more seasonings and no sour cream, it's delicious and a great potluck dish!
my husband ordered so many cans of black beans from walmart i have stored in my pantry so i have just got to make this recipe and use up some of my black beans! haha! love it!

I know Ms. Phyllis has passed on. I enjoyed watching her cooking and baking videos. We miss her. This Tex Mex casserole looked yummy. I'm not a fan of black beans so I will layer on some refried beans on top of the ground meat mixture that I will season with taco seasoning or Cumin. Then I will spread on a layer of Mild Salsa. I will also add a layer of crushed Tortilla chips instead of the soft tortilla. Then add the Extra sharp cheddar. I will also just serve the pieces of casserole with a dollop of sour cream on top instead of spreading the whole container of sour cream. Just my personal preference. Ms. Phyllis recipes were an inspiration. Thank you.

That looks and sounds absolutely delicious!!! I would love to try it. Mrs. Phyllis, you may already know but just in case you don't, you can freeze the Monterey Jack a little to make it a little more firm so you can shred it. Works on any cheese from what I understand. Tyfs, God bless you

And I'm glad you gave the tip about allowing it sit in the fridge overnight. A dear friend of mine (and an incredible cook) used to say "you have to let the flavors marry, and meld together." That's a popular casserole here in New Mexico. We use hatch chilies, of course, and add a second layer of corn tortillas in the middle. It's such a wonderful meal!
