Same! I used to despise cilantro too. It used to taste soapy to me. But, no longer! I live in New Mexico now so maybe I have acclimated to the taste and really like cilantro now! 🌿

Mr. Kevin, this looks really good! I love just about anything Tex-Mex AND I love casseroles! This is a beautiful dish, for sure! I made your spicy chicken tostadas, but put it together as a salad. That was delicious too. So, I know this tasty little dish will be awesome! You may be able to cut back on the carbs by cutting the tortillas in half and quarters and 'tetris-ing' them so they don't overlap much. I bet flour tortillas would be good too. I had a friend give me a recipe for calabacitas with green and yellow squash, onions, corn, green chiles and Monterey-jack cheese. That would be good layered like this casserole. Another yummy recipe that looks like something i can manage. I wanted to also let you know that i made your Vitamix soup recipe the other day. What a smashing success! The basil i purchased went prematurely black and goopy in the package (grrrr for store-purchased herbs), so i ended up using fresh dill instead. I also used two small beets rather than the fresh peppers. Even with those substitutions, the soup was spectacular. Looked lovely as well with a slice of crusty sourdough on the side. And so healthy! I'm definitely making this soup weekly now. Love it! Thanks again for all you do, and all you are. Cheers!
@@kevinleejacobs1364 Just checked the package - Organic Baby Beets, Pealed and Steamed, Ready to Use. They come in a plastic container that contains maybe three individually sealed pouches. In the soup, the flavor was extremely subtle, and i like what they did to the color.
Another great recipe, I had to improvise I didn't have exactly all the ingredients still came out delicious. I didn't have Green chilis so I used Green and red peppers, I had left over zucchini, so added that in the end as it was cooked, I didn't have the tomatoes, So I used a marina sauce I had. I'm gluten and dairy free which is what got my attention,, the corn tortias, which I had in the fridge.. I used the Daylia shredded Dairy free cheese. I also have a hard working husband who I knew would prefer a meat in this so I used a lb of sweet ground sausage I had in the freezer.. Your right, plenty of wiggle room in the recipe. Very good Thank you !
This looks so good. I am going to cook the black beans in the crock pot. Can't wait to make this. Yes, as children of the 60's and 70's, we were well acquainted with soup based casseroles. My mother in law used to pour Campbell's cheddar cheese soup over steamed broccoli as well.
This dish looks really good. My Great Grandmother made a dish that included most of the same ingredients except corn tortillas. She topped the dish with a homemade cornbread topping. Her casserole was delicious. You don't need to buy a new potholder yet, a great cook never has a perfect potholder.
Hi Kevin- love this! I have all the ingredients to try it so will give it a go this weekend. One thing, a missed opportunity to sprinkle a little fresh cilantro on the top just before serving to get that fresh note to the dish. Thanks for a great, informative video :-)
