Who doesn't love a delicious, tender Texas style Beef rib?? I picked some up from a local meat market at the St. Jacob's Market and cooked them on my Weber Kettle.
It was pretty easy to prepare them. I just sliced some of the fat cap off the top of the ribs. Then I used some plain old Montreal Steak Spice for the seasoning.
Then I prepped the Weber Kettle. I created a makeshift, homemade Slow N Sear using the Weber Charcoal Baskets, a water pan and some tin foil. I threw in a bunch of unlit charcoal and then lit a few briquettes and started the fire on one side.
They cooked faster than I would have liked, but they turned out awesome!
