Excellent comment Mike at the end when you say even if you do overcook it it turns into pulled pork! These pork steaks looked amazing. Just to let you know I have learned a ton from you On offset cooking and I very much appreciate that! Excellent job brother.

MIke... what is the diameter of your firebox? and what size splits do you use for your 250gallon?

It's a 3/8" thick 24" pipe 42" long. I use splits that are 16" long and about 4ish" in diameter

What do you think the internal temp was when you pulled them - 175 to 180?

Another great video Mike - 2 inch is the way to go - grocery store by my house will break out the band saw and cut the shoulder for me - can usually get 4 to 5 steaks per shoulder - videos have been spot on - you see the Butterfinger Brisket on Outnumbered’s channel - thinking that might be good on a pork shoulder as well - Ted

Yo Mike! I've only made pork steaks once and they were great but mine were only 3/4 of an inch thick. I'm going to have to look for those thicker cuts of pork steak or else cut them myself. Cheers! I enjoyed the video!
