I been working Thai restaurants named Sen-Lek Thai noodle my boss is chief cook on his own resto he is full blooded Thailander and and he cooked very authentic Thai food I learn to cook the Thai food and adopt the food and now I’m craving and miss all the Thai food. Thai Beef soup you cook make me hungry so thinking to cool this New Year’s Eve.
A good thing to do for this soup is ask the deli counter for the end pieces of roast beef (not the Italian kind). Or you could just ask for 1/2 lb cut in one piece. This was a trick a learned from a Vietnamese cookbook author way back in the 90's. She was a restaurant chef and she'd make a super quick soup for a quick late night, after work dinner using ramen noodles and the deli roast beef. The stock was just quickly made witn garlic, ginger, onion and fish sauce. Then, of course, you add your toppings.
Looks yummy! I’ll try soaking my rice noodles next time instead of boiling them. I bought one of those skimmers @ T & T supermarket...really handy for making broth!

Ooooooohhhhh I love Thai beef noodle! Whenever it's the time of the month, I will go to have my usual beef noodle and ask for more broth. It helps to soothe my cramps. Love those bones. I will gnaw and suck all the juices out before throwing it away. Didn't realise that it seems so easy to create this. I thought it would take hours seeing all those preparations.
Great recipe thanks! Oddly my roast's temp stabilized at around 126 after about 13 minutes outside, not sure where i messed up, but i'm sticking it back in and going to try to get as close as i can to 135 without exceeding it....
ughhh! all of that work and I barely ended up with a cup of broth, but the broth tastes delicious! At least I only need more bones to make another go round of broth. Started out with 3 L, i.e., about 12.5 cups of water, and after all of that, 1 cup of broth.
Do you know that in Thailand they use "555" to depict the word "hahaha", like "lol"... Thats because 5 is HAA in Thai, just like how she said neung sawwng saam sii haa, like 12345...

Sawaddee kha, I ate beef noodle with a beef steak like these in a restaurant in Thailand. It cost me like 300 baht! However, the beef steak are so nice. Next time, I think I will buy a beef noodle from street side vendor and grill my own beef to put on top.

omg this looks soooo good! I just made homemade ramen and now I'm wondering if I can fit another bowl of noodles in my belly damn did you call it roast beast at the end? omg hehe I've been calling it that since I was l really little but have never heard someone else call it that. Might make roast for christmas, so hopefully there will be leftovers to make this
