I made this one. It was SOOO GOOD. I've added it to my list of go-to recipes. I didn't have baby corn so I just omitted it and then put some peas on the side. It was perfect!
I've never made a Thai curry before and tried this one tonight, delicious! I think next time I will use chicken thigh as I like it a bit more tender but the taste of the sauce was beautiful. As a busy mum of three I loved how easy and fast it was to cook aswell. Thanks for the recipe 🤗

If you are using lime or citrus of any sort I'd suggest right at the end rather than heating it. Otherwise it's more traditional in Thai cooking to use some vinegar
That knife over the board moment always makes me cringe. I mean, I don't know what kind of knives you use, but since I've been taught not to do that, it always makes me just a little bit anxious. XD Recipe looks delish though. Not the biggest fan of peanut butter, but I think it'd be a great hit with the fam. Nice one. x
I've just made this. 1 breast, handful of mushrooms and a sweet potato (leftovers). It was very good, but hot as hell. My girlfriend couldn't even finish it :) Next time I have to be careful with the curry paste. I could have tasted it before I put it in...
Store-bought red curry paste. But it is supposed to be a bit hot, isn't it? Maybe there are two versions, but I don't know. Here it is not so easy to procure outside bigger cities. When I reheated the meal, I felt like the heat dissolved quite a bit. It's funny sometimes food tastes lot more balanced after a while .)

Just so you know: Rendering down means letting the fat cook out of something (sorry, that's the best I can describe it). When you say "render down", you should actually say "cook down", like letting it reduce. I just noticed it in some of your videos and thought I'd let you know, so you can use the right word ☺️
I know, its a mistake I keep saying it on live shows too :-( Its almost a program I need to change in my head. I know the difference however I often use the wrong terms as Im concentrating on filming and cooking 🤦♂️
