You take 45 minutes to make a dish that it takes a Thai restaurant 5 minutes to make...how do they do it? How do they prep, organize, and run their kitchens? In this video I'm taking you behind the scenes of Thai restaurants by visiting my 2 favourite places in Vancouver: Unchai and Maenam. It's an insider's look you probably have never seen before!

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the RU-vid channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via RU-vid videos, her cookbook, and cooking classes. She currently lives in Vancouver, and goes to Thailand every year to visit her family. Visit her at hot-thai-kitche...

One of my first jobs when i was in high school as a young 15yo was in a small Thai restaurant above an old pub. Prior to this I had only had Thai food once. I worked there for 8 years from high school till the end of uni. In that time the owners took me overseas for the first time to Thailand, and the restaurant expanded to having two large independent venues in Sydney. Hard work but rewarding. I grew a unbreakable love for proper authentic Thai food, learnt to cook and prep. Though I no longer work there because Covid19 thought it was time for me to stop (and it probably was) One of the best if not the best cuisines in the world and the nicest people.

Do you know the name or brand of the sauces used for fried rice? I want my fried rice to taste like restaurant style but I don't know the sauces they use.

@@brittanywilliams8653 you need fermented crab paste to give the umami. The mtn seasoning soy sauce isnt what I would use . I would use Maggi instead if you want Authentic Chinese take away fried rice

@@oldbay2 the comment is on Thai fried rice... Why would they want your Chinese recipe? Oh, yeah, the Chinese are the Eastern Americans. Opposite of Burger King. Everyone wants it your way.

I don’t know if I’ve ever seen anyone as excited as the Unchai owners being told they were chosen the best Thai restaurant in Vancouver (over Maenam!). A sweet follow-up to your terrific profile of two great, and very different, restaurants.

I love episodes like this because I get to see things I think I would never have a chance to. That salad from Unchai definitely have me drooling like crazy.

I really like and respect Unchai for focusing on doing a few dishes amazingly well over doing lots of dishes just "OK". I think a lot of restaurants fall into that trap by puting variety over quality - they stretch themselves too thin and the quality suffers, and customers pick up on that right away.

guys thanks so much for mentioning the thai select thing! I've been struggling to find authentic thai restos in Montreal and now I have at least a baseline guide! Although I've gotten quite good at thai homecooking at this point, sometimes its nice to have the rarer ingredients!

I love how happy you were to see a restaurants dry storage! Haha Its awesome to see the ingredients and products they use. There are so many kitchens I'd love to be able to peek in and see what they are using.

Thoroughly enjoyed seeing both restaurants but Unchai was a winner for me - small, intimate with a couple of passionate people serving authentic fresh Thai. Well done Pai, stay safe during these horrible times. Hope you’re all well.

I almost never comment even though I've been following this channel and have cooked several recipes already. This video is AMAZING! I'm so glad to see beneath the hood at professional thai kitchens and think about what they are doing and the type of ingredients and techniques that could be applied to home cooking. This was great! I loved the contrast/compare with the two restaurants. The idea of the couple wanting a small modest place and doing everything themselves... Awesome!

I love Unchai too. And a lot of people do as it's very busy. I don't know if they had it there in the beginning, but they have these wide translucent chewy noodles that are amazing and also something that other places don't seem to have. There is a similar thing in Chinese food and it's kind of rare in Chinese restaurants here too. Loved the behind scenes.

This is a very nice HTK episode, Pai! I have been with you since 2015 and I think this is the most comprehensive yet entertaining feature you have ever done. Good to promote local businesses as well. By the way, because of you I have proclaimed myself as an honorary Thai person. I have cooked almost all your dishes and I am set to learn the language soon. Love from the Philippines, my dear! We went to Maenam when we visited Vancouver last year because I saw it on one of your instagram posts - definitely did not disappoint and was one of our favorite meals of the week. Thanks for sharing the behind the scenes!

I thoroughly enjoyed this video. I love that you highlighted the contrast between a smaill, mom & pop restaurant and the larger, high end restuarant. Both equally care about the quality of the food they create. I wish I lived in Vancouver!

Pailin, enjoyed watching this video. Can’t wait to visit Vancouver. Btw, you might have luck finding Thai eggplant(brinjal) in an Indian grocery store. We use it a lot in south Indian cuisine as well.

OMG now I want some Thai food!! I sure wish you could do this same thing in Toronto and pick a couple of authentic restaurants. I'm sure if you did that, they'd be instantly busier than they could. handle!

Always a pleasure to see the same ingredients that I use! My favourite thin soy sauce is Healthy Boy Brand. Black soy, too. As a fish sauce I got recommended "Megachef" in Caboolture, Australia. Only to find that our local asia store in Pinneberg, Germany, offers it too ;-) Just sent a link to this vid to a friend in Canada. This "look behind the scenes" was really fantastic!
